I remember discovering MSG a couple of years ago and I started putting it in everything, it really is a magic ingredient! Apparently there are a lot of people who think MSG is horrible for you and avoid it, but I don't think they realize just how many foods we eat on the daily have it in them.
I stand corrected only overly processed foods contain MSG, and lets be honest there is probably way more than you should consume in any one overly processed canned whatever in may be because who actually looks at a portion sizes. I do not need anything but salt and pepper to make my food taste amazing, oh but wait, I'm one of those Vegans who prefers my food in the organic as possible natural state and home cooked as well. Not hating on anyone who uses MSG but how do you know if you actually like something?

MSG just isolates those natural compounds so that you can add that savory umami flavor to other foods. It's fine if you don't want to use it, but it's not an "unnatural" ingredient.

You should try cucumbers with sliced chilies, lime juice, and tajin. Lots of tajin. The longer you let it marinate the better. One of my favorite snacks

I am a cucumber FANATIC and I don't have a mandolin or a big jar but I love just eating some cucumber with random other fixings I have around mixed up in a bowl, so this trend really speaks to me and I really want to follow some of his specific recipes. The other weekend though I made my own spicy tunamayo cucumber bowl, with tuna, kewpie mayo, soy sauce, hot sauce, and furikake. Was so good.

Of course it is. The cucumber is so fresh and adaptive. My family has made cucumber salad a staple for decades. It's kinda neat seeing people put their own twists to it. I can eat it any ol way even with just some salt and pepper (but I always prefer it with either vinegar or lemon juice and some onions and sour cream.) just remember to let it sit for a while so it has time to collect the flavors.
Same here, only it was my Mother-in-Law that introduced me to Cucumber Salad almost 50 years ago. Never a cucumber fan either, but I love it in this salad. Marination overnight works well too!🥒 Never added Salmon though… I’ll have to try that!🍣 I don’t understand the appeal of making it in a jar, but I use jars a lot, so why not! 🫙😄

I love cucumbers! There’s also a rather prolific lemon cucumber plant in my front garden, so I now have another awesome recipe to use them in 😊 And my first experience with my brand new mandolin slicer resulted in blood loss and a trip to the ER 😲 I am now the proud owner of special gloves 😂

My grandparents was doing this years ago in the 90s and early 80s and probably before I was born before they passed away.. you can mix it up however you want use different oils different cheeses different veggies
I've been making a lot of "chopped salad". I've got a "crocodile chopper" and I put veg through it, carrot and onion on the fine grid, celery tomatoes, peppers, cucumber avocado on the wide grid. I use whatever I have on the day, sometimes I add chopped olives, sun dried tomatoes, gherkins, left over cooked potatoes.... Then I shake it with dressing in a tupperware box. All combined, all with dressing, great!
I make a mecha oishi sunomono, Japanese cucumber salad. Like you, I'm pretty indifferent with cucumbers. If it's already in a salad or someone else prepared something with them and it's on the table I'll eat it but they're not something I go out of my way for. But I gotta say my sunomono is on a different level. My trick to keep the slices from getting soggy is I lay the slices out on a tea towel in a single layer and roll it up then wring as much moisture out of them as I can. I can tell when I restaurant doesn't do that when I order it. Oh, I also only use Japanese or Persian cucumbers. After mixing the cucumbers with the dressing I like to let it marinate in the fridge for a day but Taiko loves it so much she can't wait that long. I think I'll make a batch tomorrow. Thanks Emmy!
One of my favorite sauces for cucumbers is a cup of mayonnaise, a cup of sugar, and half a cup of vinegar with a bit of pepper to taste. It's simple, but it also works for bell peppers, cabbage, broccoli and literally anything you feel like putting a sweet tangy thin sauce with. Of course, everything gets better after you let it sit in the fridge and marinate overnight.
I make hijiki and cucumber salad with toasted sesame oil, rice vinegar, smoked sea salt, and a touch of sugar. I soak the hijiki first n pour off water. One of my addictions!
My favorite cucumber recipe is Persian Salad. My version is different than traditional (google). A bit simpler. Just diced cukes, diced yellow onion, diced tomatoes, feta (optional but yummy), and a mix of lemon juice, olive oil (traditionalists will hate me) and spices (I generally just use Jane’s Krazy Mixed-Up Salt, but I bet everything bagel spices would taste amazing, and I’ve also used Greek seasoning. I think the traditional version only uses mint or parsley but I need the salty/savory part. Anyway, this salad is amazing with baked salmon, steak, or grilled chicken-it can be used as a topper, even. Works well with rice (I add rice, orzo or bulgur sometimes).

Emmy, that was wrong, Capers aren't pickeld juniper berries, they are pickled flower buds of the caper bush. Juniper berries are bitter amd completely different amd they are the main aroma additive of Gin.

If you want another way to eat watermelon, eat it with Tajin. It makes the watermelon sweeter, while also being sour, and salty. BUT I also just love watermelons

I've tried MSG and never had the "it gets more flavourful" effect. It would be interesting in a side by side comparison. Because I usually just cook stuff I already like the flavour of. And I also like cucumber a lot, so I'm not sure if someone like me would taste that much of a difference

I’m with you on both your dislikes. As a child never cared for watermelon and definitely wouldn’t eat cucumbers. Now I will eat ONLY English cucumbers if in a quinoa or black rice type of salad. Cantaloupe is by far my favorite melon.

Cucumber with soya sauce and sugar makes a great combo. The saltiness and sweetness is an umami

I have not seen this particular recipe, but I was planning on making the Cali Roll version with crab, and eating it with seaweed. I have not seen it made with msg, but it makes sense. Glad I watched this. I will get my msg out of the pantry!❤

So that's what it's about. Been seeing it on the news, even internationally, that my country Iceland has a cucumber shortage because of this recipe. 😂 Looks good, might give it a go if I can find any cucumbers in the stores. MSG + cucumber sounds to me like what we used to do as kids, which was to sprinkle knorr aromat over cucumber sandwiches. Aromat is mostly msg, right?
I’m the same way! Cucumbers aren’t my favorite but now that I’m in my 30s they’re alright. Still do not like watermelon but I don’t mind the flavor.
If you want another way to eat watermelon, eat it with Tajin. It makes the watermelon sweeter, while also being sour, and salty. BUT I also just love watermelons

Hi Emmy in regards to your statement about capers, may I correct you. Capers** and **juniper berries** are not the same; they are 2 distinct plants, with different flavors, uses, and origins
Emmy, capers are NOT pickled juniper berries, they are the buds of the caper bush (en.wikipedia.org/wiki/Caper). Juniper berries are the flavouring in gin, and are from the juniper conifer (en.wikipedia.org/wiki/Juniper_berry)

I've tried MSG and never had the "it gets more flavourful" effect. It would be interesting in a side by side comparison.
Because I usually just cook stuff I already like the flavour of. And I also like cucumber a lot, so I'm not sure if someone like me would taste that much of a difference

I’m with you on both your dislikes. As a child never cared for watermelon and definitely wouldn’t eat cucumbers. Now I will eat ONLY English cucumbers if in a quinoa or black rice type of salad. Cantaloupe is by far my favorite melon.

Have you ever tried a middle eastern cucumber? They’re more crunchy and some of them have a bit of a spicy kick (especially the tiny ones). Do you have an Iranian grocery store in your area?
