  • OFF GRID with DOUG and STACY: This video is called fermenting for dummies because masontops had designed a system that ANYBODY can use. This system is for the advanced fermentor or the beginner. It comes in a kit with a fermenting booklet and several silicone lids and glass pucks this kit is a all in 1 fermenting tool.
    Natural fermentation of foods has also been shown to preserve nutrients in food and break the food down to a more digestible form. This, along with the bevy of probiotics created during the fermentation process, could explain the link between consumption of fermented foods and improved digestion.
    Cultures around the world have been eating fermented foods for years, from Sauerkraut in Germany to Kimichi in Korea and everywhere in between. Studies have even shown the link between probiotic rich foods and overall health. Sadly, with the advances in technology and food preparation, these time-honored traditional foods have been largely lost in our society.

    I am watching this again, a year later...My daughter has been making me sauerkraut since then, she got your mason tops, and loves them : ) but now it is (past) time to have more variety, so, I have turnips, beets, carrots, and herbs, thank you so much!

    I have purchased two sets of the Masontops kits: one with the regular size mouths and the other with the wide mouth. I got two different sizes so I could share with a friend and we each get two regular and two wide mouth kits. You got me started on fermenting, Stacy and I am really enjoying the process.     I have been fermenting in large jars and weighting down the food has been a challenge. I've gotten very creative using whatever I could find or create! I've been looking for a system that would allow me to make smaller batches for (2) people and this is what I've needed. I have an enormous supply of canning jars because I can during garden season almost daily. This is Excellent! I will be ordering, now! Thank you so much for your honest review!

    Shalom Doug and Stacie!! I'm so excited about getting back to fermenting. I have an old style, small, fermenting Polish pickling pot which I had picked up at Boleslawiec pottery manufacturer, in Poland, while on a missions trip. I watched them make the pottery which is famous world wide. My little pot isn't big enough and when I saw your video demonstrating the fermenting kit, I knew I just had to try it. So, I, literally, just ordered it. I can't wait to get it in and try it. Thanks for being a health advocate and inspiring others to live healthy, on the land, the way YHVH designed our bodies to function. Love you both. BTW, I have over 60 tomato plants in my garden, all started by seed. Excited! Shalom!!!

    Thank you so much for this!! I explained to ya before how much you guys and Heidi at Rain Country Homestead have helped me help myself with my MS. Well, I've wanted to start fermenting myself so I could try other veggies. I've been getting a few different things I find at Whole Foods but it's very expensive that way and being on retirement/disability I'm on a budget!!! After I pay bills, Drs, medications I try to pinch back a little to put towards what I call my, "Self help health fund!" Guess what I'm getting this month thanks to your coupon?????       I'm not new to Doug and Stacy, but your story touched my heart! I feel so limited with MS a lot of the time as well. Diagnosed in 2003. I'm also factor five disorder.     Just wanted to say how much we appreciate all the hard work and things you folks do out there to try and teach some of us old dogs a new trick or two. I personally have NEVER fermented anything myself persay. I have seen others do like cabbage in a big crock with a cheesecloth on top and let it set and ferment when making sourkraut stuff. So gonna get this kit and give it a whirl.

    I'm trying : Nail size hole in reg. canning lid, Cut a thin piece of magnet (like the one's stuck on the fridge) place over the hole It will let the gas out then reseal it's self, Seems to work pretty good.

      M Sixty thank you! I was wondering what else I could use, as I don't want to buy anything if I already have things that will work. We have magnetic tape that will work great, I think (just leave the paper on the adhesive side).

      Nikki.. you should still get that pressure canner..It gives you another method of making meats and veggies shelf stable..Absolutely nothing wrong with fermentation..I support it as a method for storing/processing foods.. but you should know all of the various methods.. and not everything tastes good when its fermented..I love my pickles asparagus spears.. but sometimes I want a cream of Asparagus soup too....

    Thank you for explaining the difference between the clear and cloudy liquids. I am new to fermenting and never knew the liquid would turn cloudy. I would have probably thrown it out-LOL! WHEN YOU PREP YOUR VEGETABLES I NOTICED YOU MASHED THE CABBAGE--IS THAT THE ONLY FOOD YOU CRUSH?

      The liquid should be drunk or used for your next batch of the same stuff. Tons and tons of probiotics in it and it would jump-start new ferments with bacteria already collected and stored. If you want to save it put it in a jar and put it in the fridge, it will keep for months and months.

      Oh, I forgot to address the crushing; some people just use their hands or a potato masher if you start out in a bowl, tub, or crock, then go to a jar. However, you still need to mash or pack tightly to draw out more juice once in a jar. Currently, I'm using an old wooden handle that fits in a jar. Unfortunately, the potato masher doesn't fit in a small or large wide-mouth mason jar.

    What a great video. I love fermented veggies and have some experience making them, but not always have success. The system you've demonstrated looks like an excellent simple solution to making it easier to ferment. I agree that fermented vegetables are really important for good health.

    Hi guys!!! Thank you so much for making this video. I have watched several of the fermenting videos here and a lot of the time they seem over complicated and a bit intimidating. You never once made me feel that way, watching what you did with that little baseball bat tamper thingy. And also thank you for including the link to the Masontop place, I just went over and checked them out and I pretty much put all of their stuff on a mental wish list. Do you do kefir?? Would like very much to see a demo if you do, and can I request water kefir if such a demo is in your future?????     My first carrot and garlic ferment...I thought it would be good with about 4 small garlic cloves in a quart jar. Whoa boy...the carrots tasted like crunchy garlic! So beware of how much flavoring (garlic, onions, red peppers) you use as it does bring out the intensity especially with lighter flavored veggies.

      Hey Ann what I do in those situations I use that to flavor other things like salad d
      ressing or flavored soft cheeses. Use it in cooking just like you would regularly! Good luck!

    This might be a stupid question, but I was wondering how you eat it? Do you have it with something else like you put sauerkraut on sausage? Or do you just use it as a side dish? I am new to all this, but I know that fermented foods are good for us.

    Thank you! This is an art that is apparently dying out, even in farm country. Although, to be fair, as a city-and suburb-raised girl, I did not know how to do these things, and now, living in farm country, perhaps everyone thinks I already know how to pickle, can, preserve, etc., when i don't. You make it seem so common-sense, and easy, I cannot tell you how much I am looking forward to trying this, for my family.       michael Bernon until you eat it. As long as the cabbage is under the brine, it will be good to eat. The longer you let it go the better it will taste, but keep it cool to slow the process down.
      There is a minimum of 3 cycles needed and depending on the temp it will take 3-4 weeks, but the best kraut sourkraut I had was sitting in the cold storage for 15 months.

    I just received my mason tops a couple of days ago. I bought some produce to try tonight with it. I'm so excited! We've been eating ferments for a while and what a difference it has made in mine and my husband's health.

    I've just place my order. Having taken fermenting classes before I usually had trouble with the rock/keeping food submerged/mold issues. I gave up. SO excited to try this method as it looks like it is so user friendly. And perfect timing as hubby and I just got back to eating store bought. While it's a really good brand and locally made, it's expensive! This purchase could easily give me a payback in a month or two!

    Got my fermentation kit and put your video on and went along with you. Did carrots and purple cabbage with lemon pepper. So much easier than the crock method.
