That's a delicata squash - so sweet roasted! And they weren't pine nuts, they were pepitas - pumpkin seeds. I haven't watched all your videos yet so I don't know if you've been to Pomodoro in Bristol, but I'd recommend it. It's BYOB but they do amazing Italian food.
