  • Easy 1-Pot Vegan Chili Recipe [ vegan + gluten free ]
Today's recipe is an absolute staple in the Eamon & Bec household -- chili sin carne! In a lot of ways this dish is a "kitchen sink" recipe because we take any and all veggies/beans/lentils we've got stored and throw them in. PRO TIP: make a pot large enough to have leftovers!! It's soooo good the next day ;)

I make an incredible vegan chili for all my college roommates (none of which are vegan but they’re obsessed with my recipe). I throw in a can of diced green chili’s and frozen fire roasted corn. It’s amazing.

Yesss love seeing you add garlic later on in the cooking process. Somewhere along the line people got stuck frying off onion and garlic at the beginning of a dish and you’re right, the garlic becomes lost in this weird taste. I always mince my garlic at the beginning of a dish, let it sit at least 10 minutes to create the allicin enzyme (it will only be created when allowed to oxygenate once minced, prior to cooking), then I’ll throw it in with fresh herbs at the end of the cook time. Your chilli looks divine.

I put lentils in my chilli sin carne and use a combo of spices that include chili powder, cayenne, cumin, etc. The more fresh veg the better. I like adding greens like well minced spinach or chard to cook in the next day and always fresh cilantro 😋

I liked what you said about your beeswax paper, using products that are great for the environment is important. We are so lucky to live in a part of the world ware we have options for what we do in our everyday lives. I can't live super restrictive, people need to do their research and really understand the food and the products that are in their lives.

So ingredients: start with sweet Vidalia onion, red onion, celery, olive oil. Add spices oregano, thyme, paprika, cumin, red pepper flakes, garlic powder, onion powder or onion salt, black pepper, salt.
Add one carrot, chopped. One sweet potato, chopped. Let simmer.
Add one can italian diced tomatoes, one can italian paste, one large can mixed chili beans (or more?)
    Let simmer several hours.
Serve with avocado, chopped cilantro and jalapeno.
    Did I miss anything?

I think Eamon typically uses the "Miracle Blade" knife he bought off an info-mercial years and years ago.

and with the spiceness i enjoy it best with RICE. or baked potato slices. Really recommend a little cacao in there.

Eamon when you create your rhymes is it on the spot or do you have to think about them a little. If it's all freestyle that's pretty amazing.

Whenever I crush garlic like that I feel like Harry Potter in The Half Blood Prince when he crushed the Sopophorous bean.

is it possible to get your chai tea in Toronto or is it only online?

    • @eamonandbec
      @eamonandbec  6 років тому +1

Hey Phil! You can pick up some chai from a few of our cafes to take home and brew. Have a look at our "Cafes" page on the website and see if there is a cafe near you in the city. I'd then give them a shout to see if they've got retail in stock :) If you need anything else, feel free to email Bob at bob@chaiwalachai.com and he can organize a time to meet you at the office!

I have wanted to invest a couple of wraps, but put it off for a bit as I often use containers or make enough for several.meals removing the necessity of storing partially used fruit and veg. But, there are now wraps that are completely plant based. Check out Khala Cloths if you ever need to replace your wrap.
    Yum! Awesome chili!

Your videos always make me so hungry! I'm sad that i can't eat 99% of the food you guys prepare. I'm vegan but due to medical reasons I'm also gluten-free, soy free, beans/legumes free, and nightshade free (potato, tomato, eggplant, peppers). SUCKS! Your food looks delish though. So jelly.
