    One way I'd improve the pan fried version of this: after simmering it in broth for 10-30 minutes, I'd cut the tempeh lengthwise so that it's not as thick. This will make it so the BBQ sauce will get to the middle more.
    Then I'd add BBQ sauce and a splash of water to the heated and oiled cast iron pan to create a BBQ marinade for it to simmer in for 5-10 minutes, and then stop cooking it once the sauce starts to caramelize.

    Ive made bbq sauce myself and its dumb easy and life changing. Its Worcestershire sauce, ketchup, apple cider vinegar, brown sugar, cumin, smoked paprika, and cracked pepper

    I've always wondered: does the cooking process kill off the fermentation benefits to our gut health? Anyone know?

      Great question! It seems like there's a lot of different opinions on this, after just searching online for a little bit.
      However, even if we killed off the bacteria of tempeh, there are still a lot of benefits in tempeh. Not only is is super high in protein and minerals, It's full of fiber, which is a great prebiotic to feed the good bacteria in the gut, which is great for gut health.

      I actually did some research and found the same info as you. In fact what I read states that it is a bad idea to eat uncooked tempeh. One would get the fermented aspect of it, but folks have been known to get very ill since some of the strains that may develop are not good for our gut. So all packaged tempeh has been pasteurized anyway and then when we cook it it's doubly neutralized. As I understand it the main benefit of the fermentation is to "digest" and
      help form the chewy block. As you said all the protein and fiber remain. That's good enough for me. Now we know!

    So to get it crispy, do I keep cooking it in the oven longer....for the strips?

      To get it crispy, I would pan fry it in a little oil on the stove top. No bbq sauce. Cut it into small cubes. Let the pan get hot for a minute or two. Let it crisp up on each side for a few minutes, until golden brown

      yeah that works fine. Sometimes I'll add soy sauce to the water to infuse it with some flavor, but plain water works too.

      I think it would taste really good. I do that when I make tempeh bacon and it makes the marinade sink in better

      Hmmm...crunchy? When you simmer it before sautéing or baking it, it makes it softer so it shouldn’t be crunchy. How long did you simmer it for and did you get a nice boil going?
      It shouldn’t be too crunchy, unless maybe you didn’t simmer it long enough or you pan fried it on really high heat?

      I think I like the baked better. But doing it on the stove, next time I'd add a splash of water and create a bbq marinade and let it really simmer in that bbq marinade for a while longer, until it caramelizes.

    Nothing I do reduces the bitterness enough for me to eat it. Sigh. It would be perfect otherwise. Love the consistency, sandwich-suitability, etc. Maybe I'll try a brand from the local Asian supermarket.

      Try marinating it after simmering it for 30 min. Make a marinade of soy sauce, maple syrup, garlic powder and just a splash of vinegar. If you want a bacon flavor, add liquid smoke. Let it marinate for at least a day. The longer the better. This is the best way I’ve found to cover up any bitter taste. Tastes amazing as a sandwich.
