    Species of Aspergillus and Penicillium are the main fungi that grow on cheese.
    Penicillin was discovered by Australian Howard Florey and used for its anti-biotic properties.
    He noticed that bacteria were not growing very well in a region of fungal growth in some aged food or bread.

    Dry Jack is one of my favorite cheeses. I haven't made it in a while but last time I did it picked up some bleu mold. The last one I made was a 10 gallon batch.

    looks like a great paste! a thicker rind is common in the thinner wheels, but that seems to have cut very nicely.

    Even with a mask I would not have cleaned that inside. All those spores hanging around the house waiting for you to take your mask off.
