    thanks joe! might have to buy one from sams and cut it down and vacuum seal it. i've bought some from sams and they left the silverskin on.

      Be careful and make sure you know what you're buying. I've never seen a whole top sirloin at Sam's. They carry whole sirloin tip roasts but that's not the same cut of meat.

      Yup, I've seen the strip roast which is where the New York steaks come from. Great cut of meat but way different than the top sirloin butt. 👍

    I remember my dad trying to cut up beef from the cows he had on his farm. He wasn't the greatest at that, but the beef was still great. It's definitely good to know things like this, in these times. You did a good job of separating that beef into different cuts. Cheers, Joe! 👍🏻👍🏻✌️

    And if you want real clean lines, we your cutting meat. Freeze the piece of meat you're working on for 1 hour in the freezer. Is something to think about
