    Miwa, I loved this video highlighting the 3 key fermented ingredients and how to apply them. Also how you showcased the tableware you hand picked and why, for your collection 😍 For the Q & A, If a recipe calls for 1 tsp of sugar, what is the amazake equivalent? Thank you.

    Hi Miwa! I’ve been rewatching many past videos and have questions about various condiments and other aspects of Japanese culture! I require a gluten free diet due to celiac disease and it’s sometimes difficult to find gluten free condiments. Is there a difference between mirin, rice wine, and rice wine vinegar?
    Also, how is overall Japanese lifestyle/culture different to a more “western” culture. What are some unknown normalities to Japanese life that are different? What sorts of typical holiday food is served at various holiday celebrations? What are some places you recommend visitors see to experience culture?
    Sorry for so many questions, I just have always loved Japan and want to plan a trip someday now that I have more finances available to me. I’m so happy to see your new (and old) videos!

      I have celiac and am not Japanese. I make my own mirin with sake, rice vinegar, white wine vinegar, salt and sugar. The ratio is just an experiment, you can figure out what you like over time. I hope that's helpful for you!

    My favourite miso soup is made with nasu eggplant and abura age. Miso and eggplant are delicious together! Stir fried with onions and add a bit of chili for just a kittle kick. Really great in summer when the heat takes a way your appetite.
    I never teied to swap sugar with amazake. I wonder if it would make a good teriyaki glaze🤔
    My favourite is the oval plate. Still don't know if the green ine or the blue one is more beautiful.

      also, is it ok to make miso and then refrigerate? Will it impact the health benefits?

      The simple answer is that most probiotics will die when heated. However, there are many more benefits beyond just the probiotics. I'll be sure to cover that in the Q&A!

    never been in Japan but i love the culture and kitchen and the waynof healthy cooking. Unfortunally i am not good at japanese cooking. 😅
    Maybe it s not the topic for here. I allways wonder what japanese ppl eat for breakfast and dining. 🙈😅

    All the tableware is so pretty! Those small dishes with gold are stunning. I like the idea of eating soup, rice and a variety of side dishes. If we Americans did this I think many of us would be healthier and not have weight problems. Arrigato for your video! ❤

    You mentioned a miso shop in Tokyo. Assuming you mean 'Sano miso', I just wanted to add that they also sell koji and also koji that is ready to drink, in case anyone might be interested.
