Honey Bourbon BRISKET Smoked On The Pellet Grill

- Changing things up with a Brisket is fun at times. And that’s what I do here, seasoning a 14 pound USDA Prime Brisket with a homemade Honey Bourbon Rub, and then giving it a good dose of smoke on the Camp Chef woodwind WiFi 24 Pellet Grill.
Honey Bourbon Rub
¼ cup Kosher Salt
1 TBSP Ground Black Pepper
1 TBSP Smoked Paprika
2 TBSP Honey Granules (or more)
3 TBSP Bourbon Powder (or more)

That looked darn good Ry. I really wanted to thank you for the bourbon powder recommendation a while back. I quit drinking almost 17 years ago but love bourbon taste but didn't want a bottle around. You talked about that Old Towne Spice Shop before and I ordered some of that and a few other things. Since then, been using that bourbon powder on most of my beef I smoke and I even use it in the spritz bottle. So guess I just wanted to say thanks!

Awesome looking brisket and I love the Bourbon-honey idea for beef. I have occasionally put some sweeter rubs that I normally use for pork on beef and loved the results, but didn't say much in public as thesis supposed to be "wrong." Definitely gonna check out Old Town Spices. Thanks, Ry!

Old Town Spices has some great powders. I haven’t tried the bourbon one yet, but do have the honey, hickory, and horseradish, and lemon butter ones in my arsenal. Great fun mixing up different blends😊

I have a question for you. Have you ever considered using the leftover honey bourbon seasonings in your spritz bottle to moisturize your brisket and the wrapping paper? It seems as though it would be a fine enough mixture to dissolve well over the 2, to 4 hours. Just curious. Keep up the good work. I love the home cook vibe. You are real people.

Question, at the beginning of this video you're putting the rub on, the brisket is sitting on a pan and wire rack, where did you find one that big? I've been looking for one that size, all I can find are ones 12 inches long, or wide, Thanks!

Hey Ry what’s your thoughts on smoking with the pellet smoker vs propane/stick etc? Is it a good choice to have? Can you tell a difference in taste and Smokey taste than stick smoker etc? I’m looking at purchasing the woodwind 36 I use the smoke vault propane by camp chef and really like it but just looking for more ease doing longer cooks without having to babysit. Thanks for any feedback
I find the Woodwind 24 gives nice smoke flavor. The adjustable smoke level works well. I usually set mine at 4 for decent smoke flavor while still maintaining a fairly stable temp.
What grill grates are those you have in the bottom of your Woodwind (I assume they're cast iron)?

Yes. Chuck and Brisket cook very much alike.
How did you come up with that ratio?
For the rub? Some experimentation, but as I mentioned in the video, that bourbon powder trips me up. The rub can handle more 👍
