    Khandriga Palakova
    For anyone hailing from Andhra, Konaseema or Rayalaseema regions, Khandriga rings a bell, and some pleasant, sweet notes at that!
    Driving down the country road to Amalapuram from Ravulapalem in the Konaseema region, one comes across a quaint little sweetshop on the left that announces, ‘Aadilakshmi Sweets and Teastall’, in Khandriga, East Godavari. You could almost miss it if you weren’t actively looking for the store.
    Do not be fooled by its humble façade. It is the ultimate rural adaptation of a food store you might find on the highstreets of New York city. And, what’s more? It offers unbeatable food quality, service, and sales.
    In teen lingo, these doodh pedas ‘are to die for’!
    This tiny, unassuming sweetshop also sells tea to passing tourists. It makes some amazing ‘Doodh Pedas’ or ‘Pala Khova’ (a milk based sweet) which fly off the shelves almost faster than they are prepared. Pala khova is a sweet ‘fit for the gods’ and just melts in the mouth. A condensed milk delicacy painstakingly made, this sweet is a favorite with clients living in the USA, UK, Middle East and across India.
    Suravarapu Veera Raghavulu currently owns this family business. He inherited it from his father Suravarapu Subba Rao 15 years ago, who in turn inherited it from his father 15 years ago. So, it has been in operation for three decades now. “We do not use packet milk. We, directly use high grade, freshly drawn, undiluted whole milk from bovine animals,” says Raghavulu.
    Food fit for the gods
    It’s a daily practice to reduce around 20 liters of full fat milk to five liters, by continuously boiling and stirring in an iron ‘kadai ’ or skillet over live charcoal fires. After the addition of sugar, the already condensed milk is further thickened till all the water evaporates and only the milk solids are left called ‘Khova’. A vigorous stirring of this khova follows, to improve texture and to cool the mixture. The process takes two hours from start to completion. Thereafter, balls are made and flattened with the palms, each weighing 50 gms each, packaged and sold. One can imagine the skill and knowhow that is required to manage these charcoal fires and control temperatures so that such large quantities of milk do not scald and burn! There are many batches of pala khova made from sunup to sundown. Every day, 500-600 liters of milk are made into 70-80 kgs of pala khova and sold the same day.
    Vegans forgive us, please!
    Aadilakshmi sweets and Teastall has no other branches with no expansion plans in the near future. So, this demure sweetshop stakes a claim to being the ‘one of its kind’ brand of sweets from the Konaseema region.
    There are other sweet and savory specialties, but the Pala Khova is its signature item.
    Travelers stop by to purchase ‘kilos’ of sweets for friends and family. Watch out: those who are lactose intolerant or vegans can always pick up some Konaseema khaja, another popular, wheat-based dessert. And, if you’re gluten intolerant, ask for the Chef’s special!
