In Norse legend, there really were two sides to Loki. Most of the time, he was like Stanley: a harmless (if annoying) troll, like Bugs Bunny. But when he felt slighted, he was cruel and cold blooded like Dorian. The difference in transformations show Loki's dark side coming out
There's a reason why Peggy's death scene was cut in the final version. It's because there were plans for her to return in the sequel. Though the sequel didn't happen (indeed there would be the inferior sequel Son of the Mask), Peggy did return in the animated TV series continuation.
I will tell you how she disappeared in the middle of the scene there is a deleted scene that they left out where Dorain already killed her and I feel glad that they didn't put that scene in there because after seeing Dorian getting his revenge his payback by killing Niko in the end the film was violent enough after seeing that's the reason that they didn't do Peggy's death in the film they put as a deleted scene where Dorian already killed her.
I think this scene adds a lot to Dorian character! It shows how bad and cruel Dorian is and it contributes to the viewers' fear and apprehension of what will happen when the mask is in Dorian hands.

It would have made more sense if they kept this scene in, it explains why she just disappeared, and was gone for the rest of the movie, and she got her comeuppance for betraying Stanley. Also, it shows how dark Dorian can be with the mask on, and just how much of a violent person he is. But I understand why they left it out, because they planned to have Peggy in the sequel, which was never made. But still, it always bothers me that she was never seen again after this scene. They could at least release an extended edition with this deleted scene included.
I think she redeems herself by refusing to team up with Dorian. When she announces that wasn't part of the deal and When she aim her gun to Dorian that's where she redeemed herself.
She appeared on the cartoon, though, working on a tabloid newspaper. Even referenced this moment, though not mentioning Dorian by name (she just said "Snatched you to some gangsters" or something like that), to be trusted by Stanley again on the first episode.

I always thought that scene was oddly paced, it was also cool to see Dorian mask using his powers for his own twisted sense of humor, but...I also liked Peggy being smart enough to know she'll be punching way out of whatever league she just witnessed in front of her despite her objection to them killing Stanley
I say good riddance to Peggy, I hated her for betraying Stanley. It figures that Dorian would kill her because she knows too much and can't be trusted. Stanley knows too much, too but Dorian knows that the police won't listen to Stanley as they're already convinced that Stanley is The Mask so he might as well let the police have him.
