I definitely appreciate that more Haitian cuisine is being included in the series. I just wish, for the love of God, that there was a separation of the two types of patties here. One of these patties is the flaky baked kind and the other two are ‘Pate Kode’ or the fried kind. I love the flaky baked ones - those really are the star and make our patties unique in comparison to the rest of the Caribbean. 🇭🇹

I love the fish ones with the flaky crust. In Miami, used to buy six of them before class. That crust is addictive, messy but I prefer it over the Jamaican patties.

I don't know where and when paté kode emerged but the concept is sort of similar to empanadas, so I suspect it might be a more recent invention derived from hispanic influence. Especially since hot dogs are not a traditional Haitian ingredient and wasn't a thing that older people cooked with. Don't hold me on that though. It's just a theory and I could be very wrong. lol
Haitians LOVE the color red. It's basically our unofficial national color. Our flag is half red & half blue but you'd think it was all red by how much red we wear.

I went to Haiti and tried it for the first time. It was sooooo goooood. Came back to Chicago and have been looking for a place that makes it just like the one that I tried in Haiti. They have been delicious but the ones in Haiti were exceptional.
Chicago weirdly doesn't have a Haitian community, I remember finding a spot in Evanston ages (almost 10years) ago. I lived there for undergrad and rarely met other Haitians.
I’m Jamaican and had a Haitian patty that almost made me prefer it over Jamaican Patties! 😂😂😂😂. But me cyaaa do mi ppl dem suh!! But Kats pattie look the best and is in line with Haitian Patties I have tried. Good job to all ladies! 👏🏾
One of the best things I've ever eaten was a pattie (fried) with the little cabbage stuff pickleez ( idk how to spell it) .. idk what the filling was, meat is all I know but my God it was so good I went back and got 4 more. It was a little grandma that was making them. I told her how good it was and she smiled so big.
The filling was probably ground beef, possibly hot dogs with pikliz. Some ppl put egg in it too. It’s called Pate Kode and it’s the kind the first and last patties were. The one Kat made is usually ground beef, chicken, herring, and there’s one more fish idk how it’s called in English (more)

I have yet to find a Jamaican pattie that is made by Jamaicans! Everybody makes them here in Quebec (Canada), but they don't feel authentic.
