I Deep Fried my whole Sourdough and then this happened

  • You guys are crazy and told me to deep fry a whole sourdough bread instead of baking it. One thing led to another and then something really weird but amazing happened. See for yourself.
    For the dough itself I used:
    - 450g bread flour
    - 50g whole wheat flour
    - 100g stiff sourdough starter
    - 375g water
    - 10g salt
    Instructions:
    1. Knead all together
    2. Wait 15 minutes
    3. Knead some more
    4. Wait until your dough doubled in size. Apply a stretch and fold whenever you see the dough flattened out a lot. It will take 6-12 hours depending on your temperature
    5. Shape it
    6. Proof in fridge
    7. Bake it at 230°C in the oven with lots of steam, or deep fry it like I did.
    Probably making tiny doughlings would have been a bit better here. Just out of the fridge, cut them with a knife our dough scraper. Apply some batter and into the hot oil!

    This was the funniest cooking video I’ve watched in awhile, so thank you!!😂. My 13 year old son walked by while I was choking/laughing at the exploding protrusion part during the frying, and then he had to watch and was crying with laughter too! Awesome video, keep them coming, lol.😄

    Every time you lift it out, it soaks up more oil. Deep frying can be relatively dry cooking method if at right temp and you leave it submerged till done. But who cares! 😁

    You definitely needed to score. Just like in baking, that dough is gonna expand. But frying creates a crust tapping it in.

      I would say just let it rise more, so it doesn't have much energy left for "oven spring".

      I think it might have sealed right away with scoring. But maybe fry it a bit, then score it maybe?

      @@the_bread_code Since the fry oil is so hot, and it will transfer the heat to the dough right away, the scoring probably won't do a lot of good. It would still be the weakest place for the dough to split, but it won't be the same as in an oven, where the heat penetrates very slowly by comparison. In other words, it would help a little compared to the dough in this video, but I think fully raising the dough before frying would be better.

    Use some milk in place of some of the water and divide into 3 - 5 pieces and flatten them out into discs before frying. Delicious fry bread that you can sweeten up for dessert or make some Indian/Navajo tacos.

    Try cutting the dough into small rolls of 50 to 60 grams, this will make great sandwiches, in Tunisia we stuff it with Harissa, olive, mashed potato, tuna, boiled egg. It's delicious!

    Years ago at a pizzeria that does sourdough crusts, one of their side dishes was deep fried dough blobs about the size of doughnut holes that got rolled in cinnamon and sugar and they were AMAZING. I haven't tried that yet but I've done frybread a bunch of times, once over a camp fire, usually in cast iron, and if you drop blobs of overproofed sourdough into corn meal (oops, forgot to put it in the fridge when I went to bed) then cook it on a dry cast iron frypan, it makes great English muffins. Now I'm working on sourdough crumpets... and when I do pizza dough I use all white flour at around 65-70% moisture or else it sticks to everything no matter what I do, and my regular loaves are half white, half whole wheat flour at 80%.
    And "Can this be fried" is the reason we will not have a deep fryer in the house, last time we did a deep fry, my husband deep fried EVERYTHING. Mushrooms, bread, carrots, my lowfat hotdogs... >.

    Hi there, i enjoy watching your experiments, thank you (danke).
    A few things I'd love to see you look into are
    1. Adding some gelatinized flour via hot water, to a dough to increase hydration and potential softness.
    2. Adding gluten to the starter to increase overall protein content (I've been doing this to boost my 10% flour and seems to work much better than adding it directly to the flour.
    3. Adding diastic malt flour to dough. (I use my malted barley i make beer from).
    4. Whisking the water and sourdough starter together (very frothy) to oxygenate the mix and give the yeasts a boost (just like in beer brewing)
    5. Pre boiling dough for a few minutes before baking... I've Seen a few interesting videos showing this technique but not with sourdough.

    My favorite!!! Mom used to make fried dough in frying pan or cast iron skillet with an inch of oil. Flatten little balls of dough. thinner is crisper and thicker is more bready. Sprinkle with cinnamon sugar while hot and we call these Elephant Ears. Or pat them thin and lay a slice of cheese on half, fold over and punch edges for a cheese fried dough. Yummo! 🎉.     Okay! So thanks for going to ALL THIS WORK to make my day happier! Of course you must fry more things after using so much oil! It would feel wasteful not to. And you have to play a little as a reward for the work! (The ‘no words’ method of communication is underrated.)

    Fried dough here in the United States is small pieces fried like pulled apart doughnuts, which are somewhat greasy, then sprinkled with powdered sugar and cinnamon.

    This made my day! So funny😂💕 My mom made fry bread all growing up which was either flattened like a pancake first to make Navajo fry bread or cut into strips. But never have I EVER seen a whole loaf fried!😅 It did sort of look like a duck or an alien head popping out of a big Twinkie spaceship! At the very slim chance that I am ever in Germany, please let me bake crazy with you! Also I don't know if your sourdough spice is the same thing but I love sourdough starter made into crackers and ground up. It makes excellent bread crumb mixture. I have used it to bread fish and add to meatballs... I love how you use your "sourdough spice" to flour your sourdough! and... other things... like kiwis and candy bars😋 Brilliant! It would be amazing added to a fruit cobbler or crisp. What if you made sourdough donuts? The risen kind and also the cake donuts??? fried or baked or both? I honestly don't understand how anyone can ever toss out starter to feed their starter. I have never once had "extra" starter to get rid of since starting it 10 years ago. I can never have TOO MUCH starter! I actually have to restrain myself from using it all, and it is an amazing feat if I can achieve a giant bowl of starter for a pizza night.

    You should try following the instructions for making Navajo Fry Bread with your dough. Instead of a large loaf, it uses small amounts of dough rolled out to make more of a flat bread.

    It was said before to let it rise fully but since the oil will crust it before it can poof, when you see it crack, at that stage take it out, score it and put it back.
    The only way you know it is done is with a thermometer, no guessing.
    Smaller will give more crunch to the bite.

    This actually isn’t that weird to me; I grew up eating a fried bread dough recipe that’s been in my family for ages. Apparently it’s a fairly common Italian dish (zeppole). The way we did it was to cut bread dough into strips, fry it, then top it with sugar. Absolutely delicious! I definitely need to give it a go with sourdough now…

    It doesn't seem all that strange to me. In South Africa we deep fry little breads like this. It is called vetkoek (fat cake) although it is definitely bread, not cake.

    Look up hush puppies - a thick mixture of cornmeal and milk deep fried. Shape into 4 inch long by 1 inch in diameter. Southern fairs deep fry almost everything, candy bars, sticks of butter, and funnel cakes.

    So cool, but it won't be in my diet plan anytime soon. How about trying to make a starter with yeast . Could we keep it alive ? would it be sourdough ?

      It might never turn sour because the yeast blocks the bacteria that creates acidity :-)

    Not Hungarian myself, but huge fan.

    halfway through this very weird video. The figure is a rubber duck! (this was my original comment). Now finished the video. soo yes you also saw the resemblance Your chocolate bar reminded me of the Scottish chip shop special of deep fried Mars Bars - which are apparently excellent. I didn't have the courage to try last time in Glasgow - your video gives me courage for next time.

    I think fried bread is better with some egg in the dough because it stops the oil being soaked in. Also oil plus butter is a recipe for acid reflux. Nice video.

    When you deep fried the air inside the dough will be pushed onto the dough so it will change the shape of the dough a little.

    It’s like pan fried chicken. The oil comes up about 2/3 the way up the meat. That allows the steam to escape while the bottom cooks. Then, when the bottom is done, you flip. I would have scored and done this, or proven longer to get a fluffy, doughnut-like bread.

    It is a crazy video nevertheless fun 😂. Should try deep frying banana. Coat with batter before frying. Yummy with ice cream. Deep fried ice cream is also heavenly. Wrap the ice cream with bread (sandwich), freeze it. All it needs is a quick deep fry. Eat immediately before it starts to melt 😋 😋 😋

    you should have scored the top, then let the bottom cook for a bit so it could expand out the score, then flip it, but that's just conjecture on my part i have no experience in this lol.

    Divide the dough it in small balls.
    Like in 50g pieces, they will cook faster, dip em in some tomato sauce and add some parmesan cheese.
