Oh in homemade chicken dumplings, always leave the skin on for flavor in the stock, then take the skin off when deboning and shredding the chicken thighs. Homemade chicken dumplings the stock is made with water and the chicken to get real chicken stock flavor, before adding several other ingredients just the southern way.. 😉 I’m sure your version is good too.
