Instant Ice Cream Rolls Phuket, Thailand

These are instant ice cream rolls being made at the night market in Phuket, Thailand. It is approximately 94 F or 34 C outside. Inside the night market it is probably hotter. There is no cutting or time shifting being done. This ice cream was actually made in under 2 minutes.
This was shot using a Canon 650D at night with just the market lights.

It is a really natural way of making Ice Cream, but you can use the cold pan to make a better way of present the Ice cream in a cup. We are making it in our shop in Spain!

What is the liquid base?
Do they make an actual ice cream base and leave it liquified?
Is it just milk?
I've read things from "just milk" to "melted ice cream" to "ice cream base kept liquid".

It's probably ice cream base kept liquid. Since you don't get ice cream when you just freeze milk. Would be awesome though...

Tina Le I'm guessing it was whipping cream, just because of the high fat content. At the least, it would be heavy cream.
