Hi Mushk. I have used Dove farm gluten free self raising flour. Self raising flour is basically plain flour + baking powder therefore it already contains baking powder in it but If you dont have self raising flour you just need to add baking powder in plain flour.

Im sorry but you needed to tell your viewere which gluteus free flour you are using in your recipe. To me it looks like either gluten free white plain or srlf raising flour. It's not clear as to which white flour you've used is it a mixture of sorgum amaranth and white gluten free flour made by another company. Please can you write to us exactly which one it is. I use amaranth sorgum rice and gluten free flour made by a company called Glutefin. That way we get a good proportion of good quality and richness in our diet i also add bhajra ka atta. I cop of each flours but 2and half tblspnd of dice flour. Or with some recipes i add cornmeal or cornflout(starch) in my flour it's entirely up to the recipe I'm making. With stuffed allu paranthas i add rice flour n 2 tspns of cornflour it gives a better crispy texture. I always put the potaoes mashed masala in the fridge for 1hr or more. As that texture goes very hard dry and easy to work with when rolling in between two sheets of baking paper. Please do let us know which flour mix you used in yout recipe bcos i really liked the way your padantha recipe.

It has the blend of following ingredients: Flour Blend (Rice, Potato, Tapioca, Maize, Buckwheat), Raising Agent (Mono-Calcium Phosphate, Sodium Bicarbonate), Thickener (Xanthan Gum) This is simply how i make aloo parathas but yes everyone has different methods you can always go for what works best for you. You can try glutafin flour too it might give you better results but as i havent tried glutafin for making parathas so i am not sure x
