    Hey folks! I'm back with another slow cooked tasty and warming dish, a chicken and mixed bean curry.
    The ingredients are as follows:
    2 chicken breasts
    1 leek
    1 red onion
    4 white mushrooms
    1/2 a yellow capsicum pepper
    Baby spinach leaves
    100g black eye beans
    100g rosecoco beans
    100g split peas
    3 teaspoons garlic pureé
    3 teaspoons ginger paste
    5 bay leaves
    400g tine of coconut milk
    2 teaspoons peanut butter
    2 teaspoons chana massala or curry powder
    1 teaspoon paprika
    2 teaspoons chilli powder
    1 teaspoon cumin powder
    1 teaspoon turmeric
    1 teaspoon basil
    The recipe is as follows:
    1. Soak the rosecoco beans and black eye beans in cold salted water for 12 hours (overnight the night before ideally), then the next day drain and rinse them before putting them in a saucepan with more cold salted water and bringing them to a simmer. Once simmering leave them for 10 minutes, then turn off the heat and leave them in the water for 45 minutes.
    2. Chop the red onion, leek, mushrooms and capsicum pepper and add into the slow cooker bowl.
    3. Put a handful of spinach leaves on top of the vegetables.
    4. Cut the chicken breasts into small chunks and layer them on top of the spinach leaves.
    5. Sprinkle the split peas on top of the chicken.
    6. Add the peanut butter, 5 bay leaves, ginger paste, garlic pureé.
    7. Pour the coconut milk on top.
    8. Add all of the dry herbs and spices on top of the cocnut milk.
    9. Mix it gently on top, you want the spices to marinade the chciken as it cooks.
    10. Cook on high in the slow cooker for an hour.
    11. Add the beans from the saucepan into the slow cooker along with a litle bit of the water that they were soaking in.
    12. Leave the slow cooker on high for another hour.
    13. Turn down to low and cook for 6 hours.
    14. Cook some rice, I used white rice with sultanas and bay leaves.
    15. Serve and enjoy!!
    This was an absolutely delicious curry, it had a great curry flavour, quite spicy but also nutty with plenty of textures from the varied ingredients. I really enjoyed this and will absolutely make it again in future.
