    These are a Godsend - thank you!
    I have to leave my oven at the higher temperature for longer, in order to get a decent crust. Also, made them a second time and added 1/8 teaspoon of ascorbic acid to the dry ingredients, to get a baguette similar to the traditional banh mi roll - worked great! I love this recipe!! Thank you!!

    I have made these and they are delicious! Easy to make and almost foolproof. Ninik is a wonderful teacher. I would recommend any of her many videos.

    just made the dough and ill update tommorow how the bread turns out!
    noooo i accidentaly put the dough in the fridge! i put it outside and ill bake it tonight
    I just made them, and they're cooling. They look SO SO good!!!
    And taste good!!

      You can put in the fridge for overnight and let it warm again at room temperature the next day

    Ninik, I always noticed cookbooks mention that the cooked bread should sound hollow when tapped, but I'm not too certain of what that actual sound is because it can vary. Thank you for tapping your baguettes; that sound is now etched in my head. Now I know what to expect from my done loaves!

      Thank you, Virginia, yes you're right a hollow sound can be varied depends on the size of the bread. A good larger bread has different hollow sound with the small one.

    Your recipes are the best. I love the music. I love watching you create the dough. I’ve always used measuring cups and spoons. But, I bought a kitchen scale and I love it. Far more accurate especially with flour since the weight could vary due to humidity. Also I think the scale is quicker, easier and, you only have the mixing bowl to clean.

    "bread crumb" ,.., if you come
    Out with a good bread crumb after baking your bread, ..you have

    Thank you for sharing this recipe. I’m going to try them this weekend. If my room temperature is 36C with high humidity, should I leave it overnight in fridge instead?

      ณจันทร์ เจ็ดสี : Bread dough kept in the fridge will prevent the dough to rise too quickly in hot and humid weather. Giving time to rise helps improve the taste. When you take it out the next day, give the dough an hour to slowly come back to room temperature, and then continue with Miss Ninik's instructions. I have made this recipe at least 6 times since I first tried it a few months ago. This mini baguette is magical!

    Hi Ninik. Thank you for sharing your knowledge and passion for bread. Watching your videos made me realize I haven't really paid attention when making bread...no wonder I wasn't getting fluffy bread. Do you use the oven with fan on or without?

      madalina isofachescu, you're very welcome. I use without the fan on. Mostly I use top and bottom heat for my recipes. Though, every oven is different.

    The only difficulty I had was shaping the bread - the dough was very, very sticky and wet and I ended up adding a lot of flour.
    Besides that, the flavor is very good and it does make a good crust. I’ll definitely make these again (probably next week) and try and get a better shape.

      Hello Rueben, yes this dough is very sticky, in that case, please repeat the folding process (lift it up and rest) for a few times until the dough is pliable to handle, may add little flour. Thanks so much for trying out the recipe and the feedback, I appreciate it!

      I tried making this bread according to the instructions. The dough turned out wet and very sticky. Left it for another hour each time - in total 14 hours. Ended up using more flour. The end result - the bread crust is hard and the inside very chewy.

    Im a big fan of urs too. Today morning i made this. I used plain flour. But my bread turs very heavy. Not as good as urs no holes in it just a 4 dense breads . I dont know where i went wrong. But i will try it again tomorrow. Thx dear

    Hi there Nini B! FINALLY, an easy to follow, no BS way of doing baguettes. The metgod I use is from famous French baker and everytime I make them, I feel as if I am building an intricate rocketship. Too fuzzy, no joy. Thank you very much and God bless you mightily for sharing!
    BTW, this dough can be used to make pain de campagne, yes?

      Pain de campagne normally use a sourdough but I think this recipe will work too.

    Is it okay if I put the dough in the fridge over night? Because my room temperature will be more than 20°C
    How if I want to bake it in stove oven that doesn't have temperature control? How long should I bake it?

      Yes, you can put the dough in the fridge overnight and let it warm again at room temperature for the next day.
      For baking using a stove-top oven, let the oven very hot and bake according to the recipe, then lower the heat to medium until the bread fully baked. Please watch out during baking.

    I made it exactly with your receipt but the dough after over night is more wet than yours and when I slash after second time rising, the dough can not split and no “ear” after baking

      Apple Deseyne, if you find that your dough is too wet, please fold it up and let rise again for an hour or two and fold again until pliable to handle. It needs a lot of practice to get this level of 'ear'. Don't worry too much :)

    I have a question about the yeast you use. It seems these days there is a lot of confusion about "instant" yeast..some say it is the same as "rapid rise", some say it is different, so.can you tell me what brand you use ? thank you !

      A homemade bread usually changed faster than commercial bread. We can wrap then in a paper bag at room temperature or store in the freezer.
