    I just received my Ank yesterday! I’ve been watching so many videos, while I’ve waited to have the Ank delivered. I love all your videos and decided to start with your matrimonial rolls as my first recipe. Just assembling all the ingredients and will get started. Thank you for all the hints and tips which has helped me feel more confident than I would’ve without them. ❤

      So glad you found it helpful. If you're coming to the Ankarsrum from a KitchenAid it requires a bit of rethinking. Once you can visualize the Ankarsrum as functioning like a pair of hands in a bowl it should click. ~Michele

    one of the things I like about your video here is that you interject some machine details (such as the position of the knobs -- until this video (and I've seen quite a few on the "Ank") I wasn't aware that the MAXIMUM SPEED was "position at 8:00" - no one has mentioned this before!) which can be very helpful for those who either own or don't own this particular mixer. You also describe the major mixing components (the scraper and the roller) as substitutes for the heel portion of your hand (the roller for kneading) and the scraper as the "lift/fold" portion of kneading. I also wasn't aware that crystalized honey can be "reconstituted" by just adding it to the hot butter. Now if you could somehow pare down the amount of butter in this recipe and still come out with similar results, THAT would be great! One video addition that would have been really nice is a separate camera view of the INTERIOR of the mixer while you're using it (similar to how the Ank USA demos are done). I would have liked to have seen how things got mixed in for this recipe using this mixer (although you have a couple stills of the mixed product). I also appreciate some tips you provide such as the "smooth side down" and the importance of remembering where that is. I had never considered that before!

      Thank you kindly for your detailed evaluation. It is very helpful to me as I am in the early stages of learning the craft of making videos. (Steep side of the learning curve!) You offered me some very valuable advice. And I am glad you found some new pieces of info that "clicked" with you.
      PS. Feel free to reduce the butter! I think the reason these rolls got their name is that they're irresistible and butter is a big part of the equation, but it can be reduced. They may be a little less smooth and luxurious, but are still very good.

    Wonderful video! If I lived next door, I'd be your Crammer, always at your door, looking for fresh baked goods. I need to make some of these rolls. I've always thought rolls were intimidating, but you made them look easy-peasy! Wish I had some of that huckleberry jam too. Will you be doing videos on making jam and canning, too? I hope so! Ps.       Well, that would be fun! I'd love it if we were neighbors. We could drink tea/coffee on the front porch and solve all the world's problems, between the two of us. We could even go pick huckleberries and make jam! 😀 I am quite sure I could learn a thing of two from you about baking. The rolls are good made with whole wheat and your usual substitution for butter. I'm accepting suggestions for videos, so let me know what you're interested in.     Thank you for the recipe! Your video helped me decide to purchase the Ankarsrum Assistant mixer. I am wondering if you could provide guidance on scaling for the Matrimonial Roll. Up to this point, I've only attempted a batch using 4-5 cups of flour (the rolls are very soft and tasty!), and I'm interested in making an even larger batch. Your recipe indicates that we can scale up the roll to 2 to 3 times its original size. However, I've noticed that the only ingredient that seems to increase is the flour, while the others remain the same. Is this adjustment correct?

    Michelle - what should I do if the dough is much stickier than your post it note test? Do I add more flour and then start the kneading all over? Or how do I fix a dough that is too sticky after the kneading process? I just got my Ank and am new to both it and to bread making. Thanks!

      Congratulations on your new mixer, how exciting! The best way to get acquainted with it is to bake weekly until you feel comfortable with it.
      Did you remember to let the dough restb5-10 min before checking it against a Post-it note? It's okay to keep the dough a little on the sticky side. If it's much stickier, go ahead and work in a little more flour, a little at a time. You don't need to start over with kneading, just knead enough to incorporate the flour, then let it rest 5-10 min and re-check against a Post-it note. 🌸 Michele

    I honestly find it difficult to follow your recipes as you only give volumetric quantities. Like most Europeans, I tend to use weights - in grams of course.

      Thank you for the feedback, I apologize for that. I am American and we use US Standard measures in cooking. Others have commented similarly and I am planning to go back and add the metric / gram measurements in the printable recipes on my website, one at a time. ~Michele
