Good attempt Ms. Val, on the Trini Fried Bakes. Just a tip: to activate the yeast use lukewarm water (hot water will kill it and cold water will do nothing to it so that's probably why it didn't puff up). Resting dough before frying for best results (the gluten strands must relax to develop into a soft , smooth dough). I was happy when I saw the liquor bottle. I started that way and (no shame...lol). Also I never had ackee before so thanks for that recipe...I shall try to make it.😊

I put really cold water in a bottle and Use it as a rolling pin. The pastry stay cold when you roll. Put the bottle in the fridge to cool the water in it!

You could try dissolving your yeast and sugar in some warm water then used it to nead the dough! Cover dough with a towel and allow to rest for about 1 hr! Everything looks delicious!
You need to let the flour rest for at least half an hour before you make the bakes you could use warm water to dissolve your yeast then add to flour mix still need to rest it before you fry now sister Val this is what I do with the self rising flour I mix it with the regular flour and use no baking powder or salt in it say 1 cup regular flour 1 cup self rising I use that way to fry dumplings too.
Theres also a twist to fry bake you can add a quarter tsp baking soda to the flour and the butter is optional and its either yeast or baking powder your choice, you did a good job looks inviting
MIss Val you did everything right but in my opinion its the consistancy of the dough the lighter you mix it and the longer you let it proof you would get a better bake, you are an experienced cook am sure next time it would be perfect just knead at a lighter consistancy

Val you rolled out the dough a little too thin you should have left it the way it was before you rolled it out. Not all the time we get things the way we want it to be 🇹🇹🥰
I usually make my dough rest for around 25 mins before frying. I usually use baking powder only. No yeast and they puff really well.

Val baking powder gives very good float and maybe you need to flip them earlier
Mix your dough to a softer consistency, its a learning experience you did good it can eat as is, the first time is practice
