I think the sheet cake thing is referring to a lot of cake artists online doing the tiered cakes, sculpted cakes, or the tall rounds. They’re fun to watch too of course but specially designed and elaborately decorated sheet cakes are a refreshing change of pace!

It's so fabulous!!! I used to decorate cakes before carpal tunnel hit too hard and I had to take it down several notches. One of the things that I noticed was people were really starting to want bigger and fancier cakes. 3D cakes and fondant cakes were the highest in demand. People spent hundreds on cakes just for their looks. I'm actually glad that sheet cakes are coming back in style. I think people are going back to it since the economy is squeezing everyone so tightly. People focus more on flavor than looks and have returned to classic sheet cake beauty. You can do so much with sheet cakes that still looks great without having to be over-the-top or huge in budget. And I love that. 🥰🥰🥰 Sheet cakes and 8 inch rounds for the win!
