Boiling lemon skin can make the soup very bitter. I've learned that while example many recipes. If you wanna add lemon juice or lemon skin add it 5 mins before you turn the heat off. Otherwise like I said it just taste awful unless you like bitter food.
no no you must cut all of the hard stuff away! my mot her in law in rome did it this way as far as cutting it down and putting it in lemon water; but she would let it soak longer and then remove from the water and saute all afternoon. it was my favorite dish

Suggest you to try first
Lemons in Italy have an edible pith. They are not bitter. Outside of Italy, I would use lemon peel and juice and avoid the pith
