It’s the perfect weeknight dinner idea that nestles whole chicken breasts into the most vibrant golden rice that’s infused with warm and earthy flavors (plus some sneaky grated carrot for a veggie boost). The casserole recipe bakes everything together in the oven, and when it’s done, you simply have to fluff the rice, scoop out a chicken breast and serve it up! It’s easy and super delicious with curry-like flavors.

This has become part of our regular dinner rotation, we have this at least twice a month. Absolutely delicious!!! I chop the chicken up into cubes and cook everything on the stovetop in a covered pot and it’s ready in around 20 minutes!

I made this tonight. My husband really liked it! I used chicken breast for him and a block of pressed tofu for me. The tofu turned out great. Really silky smooth and moist. Great flavour. The only thing I would do differently next time is maybe add some raisins or craisins so the rice will be like the Afghan rice at our local afghani restaurant. Another great Downshiftology recipe!

I made this and not only was it so delicious but it made enough for 2 nights. We will definitely be having this dish again. It was so easy to make and the rice came out perfectly! Absolute winner at our house!

This gives me so many ideas. I make a very similar meal but I make a roasted whole chicken and make garlicky tumeric rice as a side. I'm definitely going to add shredded carrots to my golden rice and try it with coconut milk, that sounds amazing.
You're already on it Amanda! If you're making the rice separately already, I probably wouldn't add too much coconut milk. This method works better in the casserole with the chicken.

@@Downshiftology it was delicious. A quick meal while I continue to work from home in Australia . I pre soaked the basmati rice that reduced cooking time. I also did not cover my baking dish with aluminium foil and everything cooked perfectly. I also did not have coconut milk instead had some coconut kefir . I ate leftovers for lunch today. Thank you so much 😊

We made this recipe and it was awesome. It was just two of us so we had a lot of rice left over. We decided the next night to try shrimp with the rice so I made the sauce recipe again and added shrimp that was sauteed for a few minutes at the beginning with the onions then removed. I also added some mushrooms and used milk instead of coconut milk. Once it was mixed in, I added two tablespoons of chunky peanut butter to the sauce. I let it cook until it reduced a bit, then put the shrimp back in for a few minutes. I heated the rice in the microwave with a little water, and put it on a plate topping it with the shrimp and the sauce. It was just as delicious the second night.
