This is a piece of advice I read a long time ago for getting the correct mouse sensitivity in FPS games.
Get in game and pick two points, it could be a pair of trees, corners on a box, or whatever. Start with your crosshair on one point, close your eyes, then move the crosshair to where you think the other point is. When you open your eyes check how close you were to the second point. If you were past, then lower sensitivity, if you were not far enough over, raise it.
The idea was to adjust sensitivity until what you do subconsciously for moving your mouse matches what you perform in the game.
So for this, and other racing games, adjust the settings until the bike/car does, not what you need it to do, but what you think it should do based on your regular inputs.
