The SLR has been like this.. odd unintentional unicorn in most racing games today. It was even taken out of the later Forza titles, and it doesn't seem like too many more games are getting the SLR nowadays. It almost feels as if Mercedes and McLaren can't seem to reach a deal regarding the vehicle's use in outside media.
Simple, they don't want these classic beasts taking all the glory away from all the AMG cubs, those computer cars also need to develop some fame, you know.
The problem is they want to introduce the newer lineup, especially with McLaren having as wide a range of vehicles as they do now... It's how we witnessed the end of the crazy old GT1 cars, like the CLK-GTR, Porsche 911 GT1 or the Maserati MC12. What was the last game that used those? I think I remember the CLK-GTR in Hot Pursuit 2, and the MC12 was in the old Test Drive Unlimited, the GT1 I have no idea... last game I played it in was NFS V.
That's why I hate pursuits in this game. These techs sometimes absolutely kill the balance, especially when you are low-level and go into MP against high-level

Evem though they weren't allowed more development time, they still try to break their own formula to innovate. And that means a lot more than the corporate-induced NFS we get these days.

I just realized the car appears on mobile version of Need for Speed, call NFS No Limits through an update on August this year. So I can't see why the game can't appear in the game.

This lead Mclaren to lose their works status as Mercedes now have their own team. Unhappy as they were, Mclaren foresaw these chain of events and they became very skeptical. Luckily the OG game still has them and there's a mod for PC that puts the 722 into the racer roster. *I'm probably gonna get slammed for this* but I've never been a big fan of the Stirling Moss when it comes to using it in game. It looks beautiful but I don't like the idea of driving a track day car on the road. The moss is after all, a track day car. Which is why I never really used it despite being quite the machine, but it's nice having it in game thanks to that unique front end.

You need to get the first version and ALL of the DLC before the game gets any big changes, because if you don't, the content will just vanish into the ether. I remember buying one of the Forza games a while after its release and immediately getting rid of it because about one-third of the cars were missing.
