Plantain flour is commonly available in my part of the country, Akure. Elubo ogede. Though quite expensive. But delicious, too. I saw few clips where the skin dried along with the flesh. What is your opinion?
You are wrong. The skin is totally edible. Who told you that it is acid? After peeling it, dry it under the sun in the same way. It will turn black. Then you can grind it and mix with the plantain itself
Why are you removing the skin? Here🇬🇼, we prepare this with the skin because the skin is as nutritious as the plantain itself.

You can't eat the skin, is acid. Please make sure you peel the skin before consumption.
