In this video I share a couple of days in my life. We visit the Trafford Centre, Costco, and I share recipes for a delicious Meatball & Mozzarella Lasagne and Lamb Chops Curry.

Products I use:

Meatball & Mozzarella Lasagne ingredients
For the meatballs:
- 1kg Lamb Mince
- 1 Onion & 1 Tomato (finely chopped/processed)
- 1/2 cup Plain Flour
- 1 Egg
- 1 teaspoon Salt
- 1 teaspoon Paprika
- 1/2 teaspoon Cayenne Pepper
- 1 teaspoon Mixed Herbs
- 1 tablespoon Garlic & Ginger Paste
Mix together, shape into meatballs and bake @ 200c/180c fan for 20 minutes.
For the sauce:
- 1 teaspoon Sunflower Oil
- 1 Red Onion (sliced)
- 680g Passata
Topping/layers:
- 2 x 125g Mozzarella balls
- 1 cup Grated Cheddar
- Lasagne sheets (use fresh if available)
- 1/2 teaspoon Coarse black pepper
Bake @ 200c/180c fan for 25 minutes
Lamb Chops Curry ingredients:
- 1kg Lamb Chops
- 3 tablespoons Sunflower Oil
- 2 Onions (sliced)
- 4 Tomatoes (I used 6 because they were small)
- Whole spices (1 Cinnamon Stick, 3 Cloves, 4 Whole Peppercorns, 2 Green Cardamom Pods)
- Powdered spices (1/2 tablespoon Salt, 1 teaspoon each: Smoked Paprika, Garam Masala, Ground Cumin, Ground Coriander, Ground Turmeric, Garlic Granules, 1/2 teaspoon Red Chilli Powder)
- 1/2 cup Low Fat Yoghurt
- 300ml Water
