Back in the 486 days we used to run Doom to benchmark our computers. Looks like thanks to this wad, Doom can still be used to benchmark fancy modern PCs too.
I reckon this particular WAD will always lag, no matter what you do, and it has nothing to do with your hardware, but rather with the limitations of the game engine itself. The Doom engine was plain and simply not designed to handle this many enemies, you could run this on a server farm's worth of RAM and CPU power, and it still wouldn't be totally smooth.

You can win the wad without cheating, just don't try to kill any monster in the second arena. Get an invulnerability sphere, let Arch-viles launch you into the sky, then try to jump over Cyberdemons and Spiders to reach the switch. Killing all monsters in second arena is, I believe, impossible without cheat or mod. I tried it many times but there always remain about 850 (lol) Cyberdemons and you don't have enough ammo to kill them all.

Supposing you've already dealt with the first arena and do that on the second arena, eventually all of spider masterminds and Archviles are dead and only hundreds of Cyberdemons remain. As there's no Archviles left, you can't jump into the sky and pass above the monsters to the exit switch. The point of winning without cheat is, let the Archviles shoot you into the sky then land beyond the monsters near the switch.
It also matters on what you consider cheating. As far as I know, monsters in the original DooM engine have infinite height, which means you can't jump over them. But, well, considering that as cheating is pretty excessive, I agree, but it does raise a thought.
You "just" need to kill the barons and keep some revenants alive in the first arena, then run around in circles for literally hours until enough rev homing rockets are following you, kill the remaining revs and then use the homing rockets to kill the final cyberdemons. Easy-peasy.
You basically missed all of those BFG shots in the beginning because you sent the projectile and then you turned away so when it hit you fired the rays into like one monster a mile away.
Slaughterrific Just in case if you don't know this yet, if you go into Options, and Hud, at the top, there is Alternate Hud. Go into that, turn it on, and there are other options for it, such as an item counter, a monster counter, and a secret counter. If it's not there, than I can't help you.
Slaughterrific There should be on called 'Janitor' which cleans up. It works with brutal doom on my cousins computer (which he needs or else it lags haha)

My GPU recently ran out of its silicon, being an NVidia graphics card. One of the good ones too. God, I imagine my PC would have an instant kernal-panic as soon as I looked at that horde of monsters. Wouldn't even need to shoot.

Note to self: Do NOT use this wad with Colorful Hell with the custom difficulty mod and put all the item and entity settings to max, I had a 1660 Ti, 16 Gigabytes of Ram, and a i5 9500 and my frames per second became seconds per frame before GZDoom crashed.
How I made NUTS run well on a 5 year old MacBook: Window mode GZDOOM 320x200 res Smallest screen size Capped it to Doom's original 35fps Software rendering There were some initial drops (35 to 15), but it didn't take long for it to stay comfortably at 35. The second area didn't even cause a frame rate drop.
in gzdoom if you turn of texture filtering, set the api to softpoly, the renderer to doom software and mouselook to off then you get much better performance.
I thought the Quake 2 room i made was ridiculous. You picked up something in the room (I forget what) and it caused one of every monster to appear. I remade Wolfenstein levels for Quake 2, and included the file with each level. Also, I tried to beat the Wolfenstein secret level, the one room with a secret path through, on a much faster computer, but it still wasn't fast enough. I tried to remake that level for Q2, but you couldn't have that many enemies in a single room.
Have you heard of a mod called Operation: Biowar? It's a 32-level megawad my friend introduced me to with custom sounds, hud, and a sweet first-level soundtrack
This actually works pretty decent in GLBoom+. PrBoom+ might still lag due to being software based. It still lags in GZDoom for me but it works for the most part.
It's impressive how many monsters you can put in Doom and are infighting with each other and all that mess and still manages to run well sort of (Btw,. different ports are optimized in different ways, I heard PrBoom+ is the best option (and also the best option for some really great but very detailed maps)), compare that to Snapmap limitation of 12 monstes, well shit..

In the Spidermaster mind cyberdemon archville arena half the reason why the cyberdemons always win is not because they are the powerfullest it's because the masterminds can infight eachother and the cybers and archs cant
I've never tried this map due to only having an older dual core laptop with a 512mb dedicated Quadro card but i'm not sure if it lags due to the Doom engine limits or if it truly is due to PC specs. I have a feeling it's more of an engine issue though.

You can actually kill about 95% of the monsters this way. The problem is I wound up with a layer of several hundred Baron's of Hell under me that keep you on the ledge. Prboom wouldn't let me walk over there heads.There also were a handful of arachnotrons about mid-field who refused to come any closer and kept me pinned to the back of the ledge.
I have this wad and on my windows 8.1 machine with 8GB of ram using ZDOOM it bogs down bigtime. I think it's a limit of the Doom engine. Holyhell.wad lags even worse. I like to turn on the fast weapons cheat and the unlimited ammo in ZDOOM and then just BFG them all.
Why did your frames drop so bad? I was running nuts.wad through Doom Builder 2, but it actually loads in zdoom.exe. Anyway, I didn't have any issue with frames dropping. I wonder if it might have been your recording software interfering? I had noticed years back when I would record with Fraps, I would drop frames like crazy. I am showing a friend on screen share on Skype, and on nuts.wad, I didn't drop any frames. I've also been using bandicam for recording videos, but I wasn't recording when I played. I did however drop frames on nuts3 like you did, on the Skype screen share.

I downloaded both Russian Overkill and this and yes it does run at a lower fps but god was it worth it.
