I think A/B Testing should be done through every stage depending on the question being asked. Having worked with lots of designers, there are different opinions of which stage is which. Some consider a wireframe design a prototype, but I think a prototype needs to be more functional. You could call every A/B test a prototype since it isn't the actual winning experience yet or you could call them production-ready since they are in the live environment. I don't think of the process as linear as some make it out to be. For example, research should be happening throughout the entire process as well. Your question is very nuanced, so maybe I will make another video to address it.
