Many highly reknowned collections (chromie squiggles, cryptopunks, etc) utilize onchain metadata as a way for preservation. But you have a great point!
Many early 'on-chain' NFT collections value rocketed due to scarcity. With IPFS came millions of NFT's launches causing the ETH price up to around $4k. Faced with this ridiculous imbalance the market crashed and the value NFT's plummeted.🙈
but is this topic practical? As far as I know, not many projects choose this solution for storing NFT because of gas

yep, but onchain NFTs, turn the collection fully on blockchain, not needing ipfs. And some people put more value on projects being completely on the blockchain than just IPFS
