Yes, the aluminum silicate is what gives it its high temperature insulation! I just built my dream patio and it included a wood fired pizza oven! So i did a ton of research on everything i needed it cost me about 600 to build my oven with a 36" interior diameter!
I am seriously considering getting one of these cooking devices the same way exept without laura on the front. I am in the mobil food business now but i think it would go good with the hot dog cart that i have.
I was under the assumption that you needed to have a 3 compartment sink as well as a hand washing station in order to be health code compliant? Also some kind of refrigeration to keep your dairy(cheese) products at 41F or lower. And needing to have a commissary is also a pain in the ass. I'm not being a stickler. I'm just in the planning phases of something similar and it really sucks.....
I know it’s been 7 years since you posted this but this comment is exactly what I was Looking for. I’ve seen so many people with pizza pop ups that don’t don’t have refrigerated toppings. Idk. Do u need refrigeration and hand washing?
What is the lightweight floor surface that he used I know he said it is used in the space shuttle but does he mean the tiles for the space shuttle or a different substance used on the spaceship.....anyone know?
Is this guy me from the future? I can only hope so. The name of your business is perfect!
So, what is heat pressure? Is that code for I don't know what i'm talking about?
Bad ass
Awesome! Now all I have to do is sell 15,000 pies just to pay for it!
Man i want one of these. Curious how it holds up after a couple years of bouncing down the road and such. How much did this whole thing cost?
How do I get one of those please inbox me
I do not like the top of the oven with that metal band, wrapped around it, the Napoletana would have made more of a dome shape!
What's the name of that insulation board?
Calcium Silicate board, You can get 2" thick for around $75 for 6 square feet
Vinny Gjokaj thanks you so much for answering. If I may ask, is it the same with aluminum silicate?

There was an empty space between the ceramic insulation and the fiber cement. Did you fill this space with concrete?
John Demers I highly doubt it, as they mentioned how crucial the weight of the trailor is.
