Siendo un habitante más del gran Buenos Aires, siempre pensé por que turistas no se interesan por las grandes y pequeñas panaderías que contanto amor y muchas desde hace generaciones nos deleitan con nobles productos. Una lástima que ya pocos usen hornos de leña, como era tan común no hace tanto. Gracias por mostrar lo que a muchos nos parece algo cotidiano pero tiene una historia de esfuerzo y amor atrás.
PD. Alguien debería mostrar la calidad del trabajo de cientos de fábricas de pastas artesanales que abundan en todo Buenos Aires. Éxitos, muy bueno tu video!!!
Tal cual jjajaja yo voy al centro a la facu todos los dia y esta lleno de la nueva moda (muy palermitano) pero nada se compara a una panaderia de mi barrio. Una en particular hace pan de pala, ese pan crocante por fuera y suave por dentro. Sus panes son un lujo y eso que recorri 20 panaderias buscando un pan similar pero no lo encontré...
Seguro alguno tiene o conoce esas panaderias que estan "escondidas" que son un lujo

I have no doubt that greater Buenos Aires has a lot to offer, sometimes from tourist perspective can be a bit challenging to go 'far' as we spend not a lot of time in the city, plus some come to visit families so people have even less time. I always appreciate small neighbourhood bakeries, simple ones. When I first time came to Buenos Aires I was totally amazed by the quantity of masitas, medialunas and all kind of sweets, now I see it evolved a lot, like everything in life :) Hope you gonna enjoy my Part 3 of my bakery visit, coming soon :) all the best!
Probably to know all these hidden gems/bakeries you need to live in the city for a bit, would love that though :) still a lot to discover! :)

Hi Kris! Andres Brunero is a legend in pastry stuff, I think he got it right when explained the difference between croissant and media luna, but I think that medialuna became popular in Argentina because of Italian immigrants, who brought "cornetto recipes" from Italy which are a copycat from Austria, so yeah pretty much that, but IMO media lunas were perfected over the years, the addition of sugar syrup with orange peel is local, and media lunas are a lot sweeter than Europe pastries that´s because locals have a sweet tooth rather than the traditional french pastries. Also, a lot of French people emigrated to Argentina, in Buenos aires used to be oven bakeries 100 hundred years ago, and many French bakers installed the baguette as a common bread in Argentina, I think that for a matter of number Italians were the most of immigrants from Europe so they "won" that cultural battle from bakers. Anyway in Argentina we loved that cultural crossover.

hey, that's actually true, you have such a clash of cultures in Argentina, including architecture, the way you speak, behave, think and finally eat. Italy, Spain has a lot to do with this, that's quite evident. I live in Madrid and I keep saying to my husband, "look this area feels like Buenos Aires-Recoleta" :) So food wise I can spot a big bread culture in Argentina, first time I came to Buenos Aires I told to myself "wow these guys eat a lot of bread". But again, immigrants came and brought their culture with them, plus added something specific and new so new things/pastries/sweets/pizzas were born, which now are the synonyms of Argentina. Well that's beautiful! Next year I am coming back so already creating a new list of things I wanna try, it's pretty much endless 🙈

Soooo happy you came to Argentina! This is the best time in the history of the country to come visit ! After the Covid19 Pandemic hundreds of very brave and gifted individuals felt compelled to pour their love for bakery into small shops located all over CABA and BA neighberhoods. Buenos Aires is full of small bakery shops all over with both great products and stories ! You will find the most diverse variety of sweet and sour pastries and breads ! I look forward to seeing more videos of the shops you manage to visit during your stay in Argentina !
Totally agree, nice bakeries are keep 'growing' in Buenos Aires! Unfortunately whenever I come to BA, I have too long list of things I wanna see/try/visit, time flies a way too fast! Love the atmosphere too!

The best medialunas I think are from "La Vicente Lopez" in Avenida Maipú 700, which is also a really good restaurant. I assure you that it will blow your mind!
Im used to very good quality of bread, so in Belgrano where I live it is imposible to me to get a good bread Minions or Milonguitas, I bough it from Avenida Maipú 210 "Las Delicias" (not so good medialunas). Both near because there I had my store for 50 years. Medialunas in Belgrano also is very hard to find, but this bakeries you showed are far, at the limit with Villa Urquiza.
Avenida Maipú is Provincia de Buenos Aires, isnt inside the capitol, its near and next to Belgrano.. dont mistake with Maipú from Microcentro...

Nice. I like that you noted that moisture can become a bit of an issue in laminated products. Some of my family members almost always aren't overly impressed with croissants with incredible lamination because they feel it is dryer than they prefer. One technique I found but done with cinnamon rolls is that a mixture of butter, some flour, and instant clearjel is painted onto the dough before rolling. This mixture thickens slightly while baking and also helps bind fat and liquid which prevents the butter from dissolving into the dough resulting in a greater perception of moisture. I wonder if this could be applied in some way to croissant lamination.

Great video! Cruasan is without doubts one of the best places in city, Andres is a master of Cruasan! No doubts!! I suggest try Rosie in Saavedra (Trinidad is for me one of the best pastry chef in city), you shoudl try La Kitchen in Saavedra too, i suggest La Garage in Palermo (She make one of the best Medialuna in city, with whole wheat flour, strange for that) and a new project near Recoleta call Crecia Bolleria!! Keep travelling on Buenos Aires!!!

Yes, we have a bakery per block, in all the country. People recognize Argentina for its meat. But, in reality, cattle is in second place, production of wheat, flours and other cereals is in first place.
so many types of bread too! The industry of baked goods in Buenos Aires has always impressed me, since my first time there, merienda is the best!🧉
@@KrisKazlauskaite I am not sure, but I think our "Pan Dulce" is a derivation of the Italian Panetone and every bakery makes its own recipe near Christmass. In the country side, the central region, we have a not well known but delicious food, Bagna Cauda, also brought by Italians but we made a few regional changes since olive oil was expensive and immigrants were not wealthy. Iam from the north, Misiones, and a typical bread is "Pan Cuca", that is an Spanish adaptation of "Kuchen" bread, and of course, chipas and derivatives. In Patagonia there is the "torta galesa" or Welsh cake, but, it is not a real welsh cookie, it is a regional invention as long as I know

la mejor medialunas de manteca se hacia en la confiteria Los Leones, la esquina de Salta y Garay. Una confiteria y cafe muy bien puesto. No esta mas en la actualidad. Estas medialunas eran un elixir de sabor, frescura, y muy cotizadas, con clientes de toda la ciudad. No vivia en la zona, pero visitabamos unos amigos proximos , y la fiesta mayor era acercarnos y comprar 3 o 4 docenas, para comer alli, y llevarnos a casa ( yo era chico ) . Los dueños eran españoles ( DOminguez ) y la gente de Constitucion la debe recordar mucho.

I suggest you try the medialunas in La Pharmacie near Alto Palermo shopping. Very unassuming, no glamour, not trendy, a place where everyday middle class people go to eat. But the have the best medialunas in town!! Buttery, syrupy, ultra soft, warm...glorious! Give it a chance!

Las diferencias entre preparaciones culinarias varían de lugar en lugar, unos hacen de una forma y otros de otra; sucede lo mismo entre provincias o entre lugares. Eso sólo ocurre en Argentina. Es un país que ofrece muchísima variedad en su cultura, comidas y lugares para visitar.
That's the beauty of having big country and different areas, when people say 'medialunas' they refer to a whole country, but for sure I would love love to try pastries from each different region :)

Supongo que como todo en la comida más allá de la calidad juega un papel importante el gusto de cada uno. A mi por ejemplo fuerza atelier no me parece de las mejores pastelerías a pesar de estar en la lista para recorrer.
Y de cruasán la vienesa de membrillo me pareció que tenía la masa cruda.
Esta muy de moda la medialuna de masa madre con su laminado pero también hay otras recetas más parecidas a las facturas tradicionales y por eso hay variedad en cada lugar en cómo preparan las medialunas.

Kris, there's no medialuna like a Mar del Plata medialuna. Tons of syrup, which you may not like, but an otherworldly experience all the same.
Is this type of medialuna is easily accessible in Buenos Aires or you refer to medialunas from that specific part of Argentina? :) Never heard of Mar del Plata medialuna :)

That's true, it's rare to find true legendary medialunas, but in the country like Spain many Argentinians live and they also bring their eating habits with them, we will try some places in Madrid 😉
