Kay you need to marinate the chicken in the soy sauce for at least 30 minutest so that the chicken will absorb the flavor. Next, drain the soy sauce from the chicken and heat up the oil in the pan. Don't put the chicken in before the pan is hot, othwerwise the chicken will "boil" and taste like boiled chicken and will not not brown. The browning of the chicken is important in developing flavor. Loved the 'How?!' so much! My suggestion would be that the flavour got kinda washed off at the end with the water (and I really wonder why it was there in the original recipe). If you ever want to give this another try, I'd suggest to use a hotter pan and not crowd it so much (maybe use only half the chicken), that way you may get it to fry and go brown, this time it looked like it was poached in its juices maybe? Make sure to remove excess liquid. For the sauce, I would add some mirin or sugar to the soy sauce to help it caramelize and use enough to coat all of the chicken. Pour that onto the chicken, fry until the liquid is gone (careful, soy sauce burns easily). That way some of the taste should stick to the chicken.

Hey there kay, I’ve made chicken teriyaki a few times and I know it’s difficult especially for us non-Asians, to get the chicken teriyaki flavor, add to a blender garlic and ginger, I like to use ginger paste because it’s easier, grab your chicken (preferably chicken thighs since they maintain the delicious moisture we want, as opposed to chicken breasts that dry out) season your chicken to taste and continue by adding the garlic and ginger mixture, to the Asians reading this, I make it non-traditionally so I like to add the chicken teriyaki along with the ginger and garlic to marinate, I also add a teaspoon of brown sugar and Mirin and A splash of rice wine vinegar, rice wine is also good, add some soy sauce (preferably low sodium) usually a recipe says to cook the chicken and in a different pan add the teriyaki and heat it up until it thickens, I cook it along with the chicken and it has thickened, I hope this helps and sorry I don’t have exact measurements, I use my cooking intuition.
