@@sylpra09 if frozen, defrost overnight on a nice quality absorbent paper towel like bounty, let sit at room temp for 20-40minutes on a new paper towel. I dont really have to pat it doing it this way. If the scallops have alot of moisture they dont seared as nicely and won't taste as good

Its probably white wine vinegar which is very different from a bottle of white wine. Usually wine is just used to keep things from sticking to the pan and getting caked on, and the alcohol cooks off very quickly.
45 seconds max, you can actually SEE a scullop cook; it goes from the raw 'glassy' color to the cooked white color (from bottom to top), once the white color reaches about halfway of the scullop turn them and base 'em with the olive oil (or butter, whatever you're using)
