When you discover where he learned to cook and his love for Italy and the mentors that taught him about food, it will shift for ya. He cooks fine dining. He has to carry himself in such a way. Work in a kitchen for any extended amount of time and develop a love for food and you might get a small idea of why he does what he does. I'd never be able to afford to eat there, but can appreciate a person who is passionate about their craft. Better yet if you can make a living at it.

I think Marea is the best restaurant in NYC. from his crudo to the pastas, it is incredible. Seems to me the southern Italian crowd are sensitive to a person with non-Italian ancestors moving in to their cuisine, when, in fact, White's Italian cuisine is much more sophisticated that the classic southern Italian food.

But like I said in my examples, the restaurant I worked at had 4 foie gras dish and another few specialities that even a solid 4 years after being gone, I can easily say they're freaking great dishes, but it doesn't appeal anymore at all to me.
He comes of quite arrogant, but he's not wrong. I work for a celebrity chef in Vegas and accustomed to seeing it. The reality is he's a food nerd and his passion is gratified into a business. It's hard not to get cocky.

I'm skipping over all the recent ski/snowboard videos. It's for the audience. They put videos out. Watch the ones you want to and don't watch the ones you don't want to. do you guys notice how most of the white food in fancy restaurants comes in a large dish but so little food yet the thai restaurant has every dish filled up with food. is it the quantity and quality or the quality rather than quantity?

A chef is the leader of a professional kitchen (even a private chef). If you're a great home cook, you're still not necessarily a chef. Michael White is a great chef and his friends seem awful.
