Many jurisdictions limit the value of the prizes that can be won from “skill based amusement machines” which is the legal category claw machines fall under. For example, in my US state, by law all prizes must have a wholesale value of $10 or less. To go further there are even restrictions on what items can be used a a prize. For example, no cash or cash equivalents (gift cards), no lottery tickets, no alcohol, etc. The idea is that by limiting the prize value and eliminating a cash incentives, they can reduce the likelihood of it leading to gambling problems.
Claw games in my area were a lot better 20 years ago! I used to be able to win hats, t-shirts and cups! And discontinued merchandise, such as various Russ stuffies, Coca-Cola beanies, and even baby toys(I won my eldest daughter’s favorite baby toy out of a claw game when I was 7 months pregnant with her)! Now, there are barely any claw games, and they are mostly filled with lame stuffies specifically made for claw games….

What do you do with all the prizes? Can you sell them immediately? When I was in Japan, I wasn't really interested in the prizes, I just wanted to play. So, almost every time I won I gave it away to others for free. Is there a shop where tourists can come in spontaneously and sell their prizes? Can I go to Super Bookoff Bazaar for example?

There are stores that buy the items you get from crane games. Akihabara has several. Not sure about other areas but I'm sure there are.
There is reselling areas around Akihabara, but I believe you have to be a legal Japanese citizen to use the service.
