Red velvet has vinegar in it, naturally giving the cake a light brown pinkish colour (the vinegar reacts with another ingrediant but I can't remember what), though pretty much everyone puts food colouring in it to make it truly red. The vinegar gives the slight "tang" that is a slight taste difference from the distinctive sweet, rich chocolate cake. Love your food reviews, especially desserts lol!
I mean, at this point red velvet cake doesn’t really have an official flavor or an official way to make it. But I do think that it needs to be a tangy cake first and foremost, whether that comes from vinegar, cream cheese, buttermilk or sour cream. Then a lil bit of chocolate and/or vanilla flavor needs to be added. So, yeah, it should be a tangy cake with a tad bit of vanilla and/or chocolate. If that tanginess isn’t there or it’s overwhelmed by the chocolate and/or vanilla then it’s not real a “red velvet cake” to me.

You should definitely try them from a local bakery sometime!
