- Cauliflower Mac and Cheese. We make grain free cauliflower mac and cheese with the cheapest ingredients and then we make it with quality organic and pasture raised ingredients and compare the cost and flavor. We also make a cheap boxed pasta mac and cheese to compare to. Which version will taste better and are the quality ingredients worth the cost?
Ingredients:
1 large head cauliflower cut into small florets
1 cup heavy cream
2 ounces cream cheese
1 ½ tsp Dijon mustard
1 ½ cups shredded sharp Cheddar, plus ½ cup for topping
¼ tsp freshly ground black pepper
1/8 tsp garlic powder
½ tsp Salt or to taste
Directions:
Preheat oven to 400
Place cauliflower florets on cookie sheet and bake at 400 for about 15 minutes until very light browning occurs. Remove from oven and reduce oven temp to 375
Coat baking dish with oil and then add the baked cauliflower florets to the dish.
In a small saucepan add the heavy cream and bring to a simmer, and whisk in the cream cheese and mustard until smooth. Stir in 1 cup of cheese, salt, pepper and garlic and whisk until the cheese melts, about 1 to 2 minutes. Remove from heat, pour over the cauliflower and stir combine. Add ½ cup of cheese to top and bake. After about 7 minutes of baking stir and then add another ½ cup cheese to the top and bake another 7 to 8 minutes. For a nice crust you can finish under a broiler for about 1 minute or less. Serve.
Optional, sprinkle bacon bits on top prior to serving. - Навчання та стиль

Thanks for the taste test. Good going for healthy eating. Try using a non propellant cooking spray. The spays are filled with bad carcinogens. Thanks for sharing.

Doing the three versions was a great idea! Lots of people on a tight budget would make the cheap but healthier version. For others, choosing some quality ingredients but not 100%, and still others, best quality ingredients they can find. I live in a small town so I can get some quality ingredients but not all of them. It was interesting you thought the organic cauliflower had better flavor.

Looking forward to making this tonight. After combining everything, how long do you finish it off in the over and do I assume the temperature stays at 400 degrees?
Total cook time was about 15 to 20 minutes. You can optionally take out halfway through and stir and then add more cheese on top. 😊

How much is cauliflower in AZ? Here in Okinawa..about 5$ equivalent yen..not organic..very rare organic here.
