For those wondering why the Emperor was not affected by Demi's skill, as well as why he asked what happened when the weather changed: in the LN, it was stated that he was wearing some amulets/charms that protected him against external buffs like temperature or mind control. So, its not that he was a "high level" being, he just had good gear, which Ainz anticipated, thats why Demi did that to be certain who has resistance.
Also, in the LN, the entire hall was filled with different high-level monsters from Dragons, to Demons, to Striders. It sucks how they only showed skellies in the anime.

Fluder's betrayal is definitely despicable... but at the same time completely in character for him. For Fluder, magic is _everything_ and he has spent centuries basically being at the cutting edge of magical knowledge, with nobody except maybe Rigrit on par with him. He's spent centuries being the master, being the one to teach... yet more than anything he wants to be a student again, to feel the thrill of discovering new and unknown magic, to have the joy of being able to learn again. Then, all of a sudden, he stands in the presence of a being who's very existence is like something out of the most fantastical of legends, a being that as far as Fluder is concerned is Magic itself, a being whose knowledge and powers so utterly dwarfs what Fluder knows that what else can he do but fall to his knees and devote everything he has to such a being? His Talent allows him to see the mana and gauge the spell caster level of anyone he looks at, and for him 6th tier is the highest any human has ever achieved, 7th tier is the stuff of legends and 8th tier is the realm of gods... and now he's seeing a being who is capable of 10th tier, a tier of magic so mythical that few even know it exists and even fewer believe it, yet here Ainz is, a being whose mana is like a tempest compared to the tiny little mana auras of everyone he's ever looked at and who can cast magic so powerful that even heroes legends and gods were not known to be able to use. So yeah... Fluder might be a dirty traitor, but let's face facts... would any of us do any different in this scenario?
