  • Uncle Si finds himself on the wrong side of both Willie Robertson and Dale Earnhardt Jr. when it comes to his preferred steak preparation. A passionate argument ensues from both sides of the table, and Martin finds himself woefully unprepared for the mobility of his twin boys. Godwin gives some heartfelt advice about adoption that he’s gleaned from his years as an adoptive father to his daughter, Johanna. Jay Stone reveals that he’s a surprisingly good-natured and courteous driver in response to the unusual thing that’s now named after him.

    I’ve been listening to the debate over medium plus for two months now. This past weekend I was in Harrisburg,Illinois on business. I ate two nights at the towns premiere restaurant Morelli’s. The first night I ordered a ribeye. The menu choices were rare, medium rare, medium, medium + (!) and well done. These menus were old and the restaurant had been around quite some time. I ordered the steak medium + and it was fine. Just letting you know Si didn’t just make this up.

    I understood EXACTLY what Si was saying!!
    I have been a waitress before. My interpretation would be just a little north of medium.
    Si's right about the chef overcooking steak when asking for medium well. That never turns out good!!

    So medium Plus is actually real. It is when a steak is cooked to an internal temp of 140 degrees.

    I am a former employee of a widely known, high-ish end, steakhouse chain whose name name conjures images of a cow with really lengthy horns. Medium rare + was an option for us to put into the computer when sending an order to the kitchen. We had the option to order a steak rare, medium rare, medium, medium well, well, and could add + to any temp so that the cook would push the cook time a little. Yes, it is a thing at a quality steak house, just maybe not at a neighborhood diner.

      I’ve cooked professionally for 30 years. In both mom and pop restaurants, fancy and not… and bigger chains,hotels and country clubs… never seen a + anything when I was working grill side. But! Wouldn’t surprise me that ya a thing in chain style restaurants… customers are well… customers…
      And as that person who has cooked probably ore than a million steaks… I assure you… there is ONLY rare, Pittsburgh rare ( basically burned outside and still kicking inside), Mid rare, medium mid well and unedible …, aka well done, aka a waste of god money in a steak .

      My brother and I would go out for a steak with my cousin... My cousin would always ask for well well done... We'd get med rare, which is delicious for real men... They would bring his steak out when we were almost done eating our steaks... My cousin would get his steak and he would send it back and say " Burnt to a crisp " ... My bro and I would Crack up laughing, He literally wanted to eat a charcoal brickette ... disgusting 😂

    Si is just a master communicator…he understands that if you want a different result when you order a steak you need to say something to confuse the chef so they will THINK about what it is you really want! He’s right about that well word, I don’t care what you put in front of it, if you say “well” in most restaurants you are gonna get shoe leather!

    medium plus just means a bit over medium. younger days worked in a rest. more people then you think order it. 🤷‍♂️ and the red isnt blood. 😁 rare or medium rare is the only civilized way to eat a good cut. if you eat steak medium well or well, just stop. get a burger ,youre wasting your money and ruining the steak. its just low class 🤣

    Medium Plus is a thing. If you ask for Medium you get Pink in the middle. If you ask for Medium Well you get NO PINK, but something closer to tan.
    If you order Medium Plus, the chef will know to cook it to Medium and then a little more, but not to Medium Well, as the customer would have asked for Medium Well in the first place.

    • @TheOriginalFreak
      @TheOriginalFreak Рік тому

      Doneness levels in color are Darkest Red/Purple- Dark Red - Red - -Pink - Light Tan-- Dark Tan
      Darkest Red/Purple = Blue
      Dark Red= Rare
      Red = Medium Rare
      Pink = Medium
      Light Tan = Medium Well
      Dark Tan = Well Done
      What Si is talking about could be thought of like flats and sharps in music. Also, you could use "Minus" as appropriate for levels of doneness (e.g. Medium Plus = Medium Well Minus, though because of the tendancy of steaks to be overdone when the word "Well" is used by itself or with "Medium", Medium Well Minus would be less effective than Medium Plus.
      The chart would look something like this:
      Darkest Red/Purple = Blue
      Very Dark Red = Blue Plus/Rare Minus
      Dark Red= Rare
      Medium Dark Red = Rare Plus/Medium Rare Minus
      Red = Medium Rare
      Dark Pink = Medium Rare Plus/Medium Minus
      Pink = Medium
      Light Pink = Medium Plus/Medium Well Minus
      Light Tan = Medium Well
      Tan = Medium Well Plus/ Well Done Minus
      Dark Tan = Well Done

    • @TheOriginalFreak
      @TheOriginalFreak Рік тому

      Also keep in mind that modern thermometer technology allows chefs to "dial in" doneness like never before possible with touch and sight alone, thus making the increased number of Doneness level; Current doneness levels are roughly 10F apart starting at 125-135 for Rare and upwards from there. Current thermometers in the mid-grade and high-grade levels can easily measure very close to 5F or even 2F difference with some accuracy.

    Si only has to say Medium, any chef will know exactly, if they're a decent chef, what he's describing. The "plus" is irrelevant to say. When you say medium well you're asking for the light pink color but the outside a little more seared. Godwin touched on it when he said "just ask for medium". Medium plus is 143*, and it’ll still have juice. If it’s really thick, you’ll have a hard time getting it. It’s either too red, or a brownish. 143*, 2 1/2in thick, and you’ll get it!

    A little olive oil , medium high heat , about 4 to 6 minutes per side ( I’m cooking on an electric stove is why the time varies).

    According to The Urban Baker, a Medium rare steak is 138°, a medium steak is 142°, a medium well steak (which should not be a choice) is 148 points and a well-done steak (yuk) is 152°-158°! A plus steak is 1/2 way between each stage.

    Si, the pro Alex you have is.. YOU ARENT LETTING THE STEAK REST! If you allow 5 minutes after you remove the steak from heat. It will rest, holds temperature but also wil keep the “au jus”( helpful tip, au jus is a reduced and fortified broth, Jus… it’s what runs out of cut meats… or so they say) from running out of the meat and it will stay juicy .

    Medium +??? A fancy way of saying you overcooked the steak, medium is acceptable but beyond that you lose a lot of flavor. But I will say this, Si, at least you ain't full on ruining it by going well done. Chef's have a stressful job, a lot of people don't see it, but they do. I always order my steak medium rare to medium, that gives them a margin of error and relieves a bit of the pressure on a busy night. As Kent Rollins says, "I can't get full on fancy. "

    You really need Johnny D there to fact check Uncle Si --- Once again Uncle Si is right - medium + is a real thing --- you should have watched the next Dale Jr. Download podcast -- He admits this himself later on the next podcast.

    Sorry…I’m with Si, most restaurants can never get it right. And never send back, cause it comes back like shoe leather…not light pink.

    since ya'll are doing this unashamed/duckcall room whatever it is now who is running the duck call manufacturing business like it appeared to be during duck dynasty days where Willie was CEO and Jase and Martin and Si and everyone set in that one room putting them together which I know most of that was fake by then but still who is running the original business now?

    Willie just wants to argue. I understand medium plus perfectly. I have always ordered my stick medium well and it's most always overcooked and too dry

    Y'all need to find a stack of steaks with all the "degrees of doneness" without the description of doneness. Then show it to uncle Si so he can pick out his "medium plus". Problem solved! You're welcome!😊

    Uncle Si... that sounds AWFUL. The steak sounds over cooked, but tomatoes are gross!

    I didn’t childproof my house either. My son is 3 and is still obsessed with the oven. Si, I eat my steak the same way, but I only cook my own, I understand what your saying.

    Is, I understand exactly what you want. Ask for medium plus 1, or 2 minutes. Then you can let it rest, or by the time it gets to you, it will have rested.
