Ah! I just found you and have watched 4 videos so far! This looks faboulous... all of them do... they look sooo amazing, fresh, light and delicious! I love pastry and food, but even looking at them is making me gain weight! :D I promise to use your recipes Eric when I want to bake! Looks beautiful!!! But why didn't you moist the cake before the filling??? I do all the time cakes and if you don't do that it will be too dry!!! Just saying!!!
it looks kinda dry, I think you might have over baked it and a genoise requires syrup to become moist you can't just pile the cream on.. but over all, not bad
