Rouladen (the beefy rolled stuff) shouldn’t be confused with Rolladen (window blinders)! That other food seems to be Schweinshaxe (grilled pork knuckle), with Servietten-Knödel, a dumpling of course best with gravy. And yes, if whatever food is their specialty, they are aware that it will get ordered a billion times a day, and for that reason alone they have it already prepared. That’s why you’re getting it that fast, and these two meals are perfect for that!

Mett is similar to tartare (or Tatar in german) which is made from raw pork. tartare is made from raw beef and is highly appreciated by most ppl within the french cuisine. Then we also of course have several different kinds of Breads, Buns and what not, cause our country literally had to rely on oat, rye, beans, peas, wheat, cabbage, carrots, cellery and other staples for so long. Its like saying rice is boring in china or other nations who depended on such a good base for... also a very long time. Most european food is quite rich in flavour and varies heavily.

The meat is already pickled and wrapped, tomorrow it will be stewed, and there will be dumplings, which you had on the right plate, then red cabbage with apple. I braise the roulades in red wine with onions, cloves, bay leaves and juniper, Grüße aus Deutschland, Greetings from Germany
When it comes to "sunday roasts" nothing beats the original Rinderrouladen with potato dumplings and red cabbagein my book. It is our go to on Christmas, when we do not expect the whole family thus do not make'Spanferkel'.
Hey, that is my city! If you want to try other typical German comfort food, try Swabian cuisine (Spätzle, Maultaschen, etc.) as well! German cuisine is highly diverse, every region has it‘s unique ingredients, even Germans often do not really know that much about other regions… Most typically is the heavy, often meat based food from the southern regions, esp Bavaria, but there are actual lot of fresh snd healthy (and tastewise totally different) dishes as well. Most stereotypes emerged based on post~war Wirtschaftswunder economy and habits (the economy worked nicely and after years of starvation people felt the need to compensate by eating tons of meat and fat) added to the Bavarian focus as the US soldiers were stationed there and exported those things.
