Nice tutorial, I'm, following along, getting a pretty decent result. One tip though: at 42:31, instead of deleting faces and recreating them, you can just select the vertices on either side and hit 'j' to join them. This will create a new edge across an existing face.
For those who work in Blender 4.2 and can't find how to activate "hidden wire", know that it has been renamed to "retopology" and located in the mesh edit overlays (the little square named "mesh edit mode" top/right"). YW.

There's something wrong with your model. Either the specimen has an injury or defect, or that jaw is from a different person.
