  • Chef Paisley loves to cook, and today she's showing us how to make her favorite chocolate chip cookies. They're super chewy and you can add any mix-ins that you'd like to celebrate a season or holiday!
Paisley is six years old and loves to cook, dance, and draw. Her favorite color is golden (or sparkles) and her favorite animal is-what else-a unicorn.
Super Chewy Chocolate Chip Cookie Recipe:
    Ingredients:
    2 1/4 cups flour
    1 teaspoon baking soda
1 1/2 teaspoons cornstarch (this makes the cookies really chewy!)
    1/2 teaspoon salt
3/4 cup unsalted butter (melted and cooled)
    1/2 cup granulated sugar
    3/4 cup brown sugar
1 egg + 1 egg yolk (at room temperature)
    2 teaspoons vanilla
    1 1/2 cups chocolate chips
Mix the flour, baking soda, cornstarch and salt together.
In a separate bowl, whisk the melted butter, brown sugar and granulated sugar together. Whisk in the egg and egg yolk, then the vanilla. Pour the wet ingredients into the dry ingredients and mix. Add the chocolate chips and any other mix-ins.
Chill for dough for at least 3 hours, or up to 3 days (this step is very important). Scoop the dough and shape into balls, placing on a cookie sheet that has been lined with parchment paper or a silicone baking mat. Bake at 325 degrees for 12-13 minutes. Important: remove the cookies from the oven when they still look slightly under-baked. Allow to cool on the cookie sheet for 10 minutes.
Variations: Have fun with your mix-ins! Instead of just chocolate chips, add dark chocolate chunks, white chocolate chips, peanut butter chips, M&Ms, or seasonal/holiday sprinkles!
