Liang Pi can also be made with wheat starch (made by washing off the gluten of a piece of dough; the gluten is then made into the deep fried gluten and put back into the dish). I like both kinds: rice or wheat skin. I used to work in China and have visited Xi'an 100 times.
My favorite noodles out of those dishes is the lan zhou la mian but all those noodles dishes looks delicious. Mike sure knows his noodles. How great it is to go along and eat with you guys. I like your style Dan. The sweater looks good on you.

Yes, Dan & Mike ordered Zhajiangmian (炸醬麵), which is how Jjajangmyeon (짜장면) in Korea came about but Jjajangmyeon is usually wetter. Much like how Tangsuyuk (탕수육) is the Korean take on Chinese sweet & sour pork. Usually Lanzhou Lamian (蘭州拉麵) in China is served with beef slices and in broth rather than dry. ;)

we have an amazing china town with some of the yummiest noodles and dishes from china here in Liverpool, UK. We also have the oldest Chinese settlement in Europe and at the top of china town in Liverpool is a beautiful ornate arch that was put up around the year 2000. love this video, only downside is it made me hungry. keep posting videos like these. much love from Liverpool, England
You guys are a wealth of information, bless you all. By me, there seems to be a lot of LanZhouLaMian, which I absolutely love on account of the 'stretchiness'. Everybody tells me "don't eat it! It's dirty!" but I do. Hopefully, what I don't know won't kill me.
米粉 can actually be found in both Taiwan and Fujian Province in China just across the Taiwan Strait (both Taiwan and Southern Fujian speaks similar dialects). My personal favorite is Liangpi without a doubt :) You guys also missed 粿條、冬粉 etc.
Actually, the real Lanzhoulamian is a soup noodle with beef, cuz they have the very spacial formula of making the beef soup base, that what make it very delicious. And also, the beef is different from other beef, even in there neighbor province like Qinghai, but the the zhajiangmian you guys get is also looks very nice.
Chinese style Chow Mian-Cantonese Fried egg noodles and HK roasted meats over soup noodles (egg noodles) are my favorite and HK style Fish Filet with spaghetti and tomato sauce from Cha Chan Tang.
This is completely northern Chinese. You need to do some Cantonese. The list would be more complete. The Cantonese were the original Chinese to emigrate all over the world and the original group of Chinese in America. Their influence is huge and it feels like its been overlooked. But I do appreciate this list and look forward to trying these!

I like Cantonese food but there are already too many of them. They came to the Western country first but I have to say they were spoiled the most either. More and more new Chinese immigrants are from other places of China and they all have their own home tastes! I would love to see more variety rather than stick on one kind of cuisine and think it should be the dominant or the only one on behalf of all.
Ye Xu I think you misunderstand my point. Variety is good, I like all Chinese food and love to discover new dishes from different regions. But my point is that this video is called "Best Chinese" in which a very important region has been excluded. Its like Cantonese doesn't really exist in these supposedly "informational" vlogs. They should retitle it so its reflects correctly if that's what they want to do. I am not objecting to different regional cuisines.

I'm not too fond of the new world mall mainly because it seems that when the malls started moving into the neighborhood, the local shops that have been around for years began closing down or were forced to relocate into the mall in order to compete.
I love tang hoon, mee sua, ee mee and kway teow and my ultimate comfort noodle mee hoon kueh (Hokkien). In mandarin it's called dōngfěn, miàn xiàn, yī miàn, gǔo tiáo and ban mian. *Thanks wikipedia for the translations!

I think you answered a question I had about noodles. Asians tend to slurp noodles all the way to the end of the noodle while westerners tend to bite the noodles to cut a mouthful. My question was, "Is it bad form to bite off noodles instead of slurping them in front of Asians?" I just saw you bite off the long long noodles, so I figure it's not bad form to bite off noodles btw: slurping soup or noodles is bad form to the upper crust in the West (but a lot of us still do it at home mostly because we aren't from the upper crust)

One question: In the chinese restaurants in Korea there is a dish called 'Jjajangmyeon' (Black bean noodles). I was wondering if you can compare it to the Lan Zhou La Mian you showed, because the names sound quite similar and it also almost looks the same, except for the black beans..
It's same thing, originated from China, not surprisingly Korea was a officially state of China in Han, Yuan ,Ming dynasty... tribute state of China every dynasty until independent.
I'm chinese and I never find jjajangmyeon in chinese restaurants. What I can say is that jjajangmyeon's noodles are quite similar to lan zhou la mian's. The difference is in the sauce. Jjajangmyeon's black bean sauce tastes quite mild (and has more veggies like carrots, that's why it's usuaully paired with the tangsuyuk) while the sauce/soup used in lan zhou la mian is often meat-based, salty and has a lot of MSG.
jjajangmyeon is zha jiang mian in chinese. same dish but the one in korea is more koreanized. i personally never liked the dish overall, sometimes if i am in the mood for heavy sauces.
Since a company I once worked for had several contacts to the Chinese business sector we had a lot of business lunches and one of the etiquette things they told us beforehand was not to wave around your chopsticks or point at something with them. But this seems not to be a large issue to you guys :D
I go there and there is really no menu in English so its really hard to try different foods. I only get hand pulled noodle with oxtail. thanks for the explanation
hello otgw, liang pi (bean made crepe - clear sliced squares) with more soup hot sauce or a tsp hot sauce. can come in flat plate or bowl. the bowl can be for take with rice. the food court been one of those our secrets - to take the long train ride. in ctown - the place for some is maybe shanghai cafe on mott, e broadway near allen street where more new comers restaurants opened. the buses on e broadway were moved to leave from there - it used to be on bowery. and, now more travelers eat there. thank you for the noodle share. elle for lo stir

Like some have mention the South is severely under represented but so is the north; provinces above the yangtze river as I am assuming there are more variants. Anyway since this topic is only about noodles types and not the dishes, I'm listing the names of some found in a few provinces namely: Fujian, Guangdong, Yunnan in the south including their dialect name. Compose a list of Asian drinks! When you were in the basement restaurant you talked about them. Also I would love to know if your local Asian supermarket can order them OR can you make them yourself? Love these informative videos. I made some hot oil for my husband and youngest daughter and they love it. Now they are into the spicy paste so much he is wanting to buy the gallon size!

mifen is widely referred to as mixian in most parts of China. But in Guangdong, it is called mifen also.
Can't believe Xiaomian is not in this list.It's from Chongqing and it's absolutely delicious. Pls try it if you can find one.

When you were in the basement restaurant you talked about them. Also I would love to know if your local Asian supermarket can order them OR can you make them yourself? Love these informative videos. I made some hot oil for my husband and youngest daughter and they love it. Now they are into the spicy paste so much he is wanting to buy the gallon size!
