You should build whatever you can make the most money on. The builds should fund the UA-cam channel.
Another option is a build that most pushes the envelope for you as a builder. It might not be the most profitable, but it would probably be the coolest.
Another option is an 8-string multiscale with an Alcinov barrel tuner trem, at least a 5-piece neck - maybe a neck-through, CNC carved-top body with nice cap and back wood, and really high-end hardware and electronics.
In general, I've found video calls for "what should I build next?" usually result in resounding silence - or silliness.
Once you have the basics of building guitars down, it's all about the art/concept builds, and the never-ending battle to avoid been-there-done-that builds - unless you're a factory making yet another LP type.
One luthier to another, I would love to see you go through building the arch top in depth. I feel like UA-cam is somewhat lacking in going over how to develop jigs, etc, for wood bending etc. I want to build hollow bodies as well but as a man with another full time job, the learning process is steep. Your videos were awesome for me developing my skills over the last 4 years. Would love to see your presentation methodology with the handbuilding.
Six-string bass! You could do a single-cutaway design, maybe add some fancy wood layering and sculpting like Fodera uses. Maybe a neck-through?

The archtop could be a very fascinating build. Personally, I'd be also interested in some more extreme projects such as a touch instrument (a Chapman stick or a Warr guitar inspired one), an 8 string guitar or a baritone. I think it would be inspiring to see how you deal with the peculiarities and difficulties of them.

After 3D printing: composite construction? For example as a skin over wood (a la Parker) or for the side of an acoustic or archtop? Or 3d printed part with carbon skin? By the way Parker has published a lot of videos on his construction methods. And best wishes for this new year!

Instead of archtop guitar, maybe 335 style guitar. Might be more in your wheelhouse. (Just a "second the motion".) Happy New Year.

Something tells me that knock-off Fret Kisser will just end up scratching up the adjacent frets and ruining the leveling job -- maybe I'm wrong though!
I think a nice thing to do on any knock-off tools that are essentially junk (like the AliExpress Fractal Fret Press) would be to suggest an alternative to those who may have looked at the knock-offs due to a severely limited budget -- whether that alternative takes the form of a good but less expensive tool with maybe fewer features, or just a method you have used in the past to get similar results with a standard tool that we might have already that some people may not have thought of. Just my two cents!

Chris, would you consider building a ES-335 style semi-hollow??
It'll probably be very similar in shape but will be made very differently.
