But It’s simply incredible how much Cyprus has been influenced by the Levant ( Lebanon, Syria,Palestine p, Jordan) and also Greece ( where my grandma comes from) after all, for those who studied history, we learned that part of Cyprus was founded by the Phoenicians, the ancient civilization that was part of what is today Lebanon. My Greek friends told me how many Greek and especially Turkish dishes were inspired and taken from Syria and Lebanon.. I got to have a first hand taste of their delicious food when I was studying ( for one year) at the American University of Beirut. By the way, do you know that Kofte means nothing in Turkish or Greek? That’s because Kofte is taken directly from those countries that left a lasting influence on all of us, including Italy,Spain, Malta, Portugal and France.
