✍🏻INGREDIENTS:
◇ 2 cups of sabudana (sago)
◇ 1 cup roasted peanuts
◇ 1/2 cup chopped carrot
◇ 1/2 cup green peas
◇ 2 big boiled potatoes (cut in cubes)
◇ 1 cup dry fruits
◇ 1 tbsp chopped ginger
◇ Chopped green chillies
◇ 1/2 tsp cumin seeds
◇ 1 tsp roasted cumin powder
◇ 2-3 tbsp ghee
◇ Salt to taste
◇ Turmeric powder
Now let's proceed to cook the delicious recipe...
● Rinse 2 cups of sabudana, sago or tapioca pearls a couple of times in running water until all the starch is washed away. You can use a colander while rinsing.
● Soak sabudana in water for 2-3 hrs. The water level can be 1 to 1.5 inches above the sabudana.
● To check if sabudana has become soft or not, you should be able to easily press the sabudana and it should get mashed easily.
If there is some hardness in the center of the sago pearls, then add a few tablespoons of water in the bowl. Cover and leave for 30 minutes more.
Note:
[Any water logged in the sago pearls will make your khichdi mushy or pasty.]
● Boil 2-3 big size potatoes and cut them into small cubes.
● Dry roast some peanuts and clean it. Then roughly grind the roasted peanuts and mix with the soaked sabudana.
● Add 1-2 tbsp of desi ghee to a kadhai and fry some cashew and raisins on low-medium flame, until the raisins swell and little brown color.
● In the same kadhai add 1-2 tbsp of cooking oil and golden fry the boiled potatoes separately. And keep them aside.
● In the same oil add cumin seeds to tempering. Add chopped ginger and green chillies and saute for few seconds.
● Add carrot and green peas and cook on medium flame for few minutes.
● After that add the moong dal with veggies and cook for few minutes. Then add very minimum amount of water just to soften the dal. Don't forget to mix salt and turmeric powder. Cook on low flame until the water dries up.
● After that add the potatoes, sago and the dry fruits. Mix and cook them for 8-10 minutes more.
● End the cooking with sprinkling some roasted cumin powder and desi ghee.
