I've see others ask that question about becoming monsters and then helping. I don't know why its so hard to understand that the type of people who choose to become monsters have no interest in helping others. That's why they become monsters, to dominate others. Think if it as becoming on the outside what they already where on the inside, hence why they fight those they think are weaker than themselves and don't help. It makes them feel dominant and powerful.
the fact that you don't know how they can become monsters like that willingly and how they don't choose to fight monsters as monsters is only showing how you would never become a monster even if you lived in OPM world. Others already probably answered it but becoming a monster could change your brain too so they wouldn't want to side with humans. Like that guy Dave beat, he got really aggressive after turning into a monster. Also if you're willing to become a monster you probably don't care about being human or siding with humans that much. And some of these guys are just after power, doesn't matter whos side they're on.
Clarification: Yes, a human turning into a monster is something common, and the association are really aware of that. BUT the monster cells are something new, these are created by some character that doesn't appear for now (in season 2).
In response to your question; as to why the monsters do not fight amongst themselves. Do the ants in a colony, ever fight each other? Choze also said he was losing some of his subconcious limitations, he might have lost part of his individuality and autonomy, alongside those limitations. Seems like the monster association not only gain powerful pawns through this process, but, they are also obedient, once they transform.
The main dude who turned into a monster, the reason why he didn't fight against the monsters was because of his motivation. Even as a human, he just wanted to feel superior. First he wanted to feel superior to last year's winner who defeated him, and now to Suiryu who defeated him. He was driven by the desire of power solely, and my interpretation of ONE's text is that someone like that is already a monster, so the step to fully committ yourself to that way of life will come natural to someone like that, if the opportunity arises. Same thing with the guy fixated with genetic superiority. Additionally, because monsters looks stronger and meaner than humans, people who are solely power-motivated will only adapt to and obey people more powerful than themselves, which they perceive the stronger monsters to be.
This is one of the best episodes of the show, 2nd only to 11th from this season imo. Suiryu's arc turned on it's head in a mere episode - deconstructing his character by giving this martial arts God a hard but good life lesson: "Never think you're beyond reproach.".🎉

There are certainly many "heroes" who'd qualify physically as monsters, if they'd chosen the other side. Tho the way I see it, becoming a "monster" using monster-cells, puts a totally new personality into the body.
spoiler warning to a lot of your thoughts: why not become a monster and fight the other monsters? - when turning into a monster, you are mentally turning unstable and a lot more vicious. you might have it under control at first, but your inner lust for blood and murder will consume you at one point, (SPOILER!) which is something we see happening to Amai Mask secondly, (NO spoiler) about all the humanoid monsters running around: it is well known that people can turn into monsters. a monster cell is not needed for that process, just a state of mind where you want to see the world burn for your own entertainment. its often an inferiority complex coupled with a lust for power and/or vengeance against those oppressing you, breaking you mentally down to the point where you just want to feel their blood running down your arms and body as you squeeze the life out of them. or in other words: people can turn into monsters by themself if they have mentaly gotten rid of their humanity and are now filled with a monstrous lust for blood and power the monster cell turns humans into monsters, regardless of their state of mind.
Monsters have in their selves the goal to destroy humanity (like the curses of JJK, the Devils from CSM, or the Evil spirits from Mob), no matter if you were human or not. Why? Well, the explanation (or the theory for being more specific) it's also a spoiler, so keep watching on Season 3.
