It looks easy but it's not easy work. I have done almost everything in and around my house but really regretted when I asked builder to give me un finsh staircase and I stained it
Soon I realized I can not stain correctly, evenly when I was finished it was so ugly I had to strip all stairs
All my new home was messed up and ended up hiring professional
Why you stripped down the stairs?
You could just easily remove the coat by sanding the coated surface with a sanding machine.

This is the best DIY for small projects at home...It doesn't look totally like Polish since proper polish gives tinges whereas this method more on uniform side
But as I have seen many painters suck at polish too especially PU polish as resha toh dikhta nahi pu polish jo kuch painter karte hai bas chamak mirror finish hi dikhti hai, this is also v similar..tried and tested on projects like stool, shoe rack
